Categories     Dinner

Time 35m

Number Of Ingredients 10

2 teaspoons olive oil
1 large yellow onion, diced
2 cloves garlic, minced
1 teaspoon cumin
2 cups vegetable broth
1 15oz can fire roasted tomatoes
2 15oz cans pinto beans, rinsed and drained
Salt to taste
2 tablespoons lime juice
Toppings: diced jalapeño, diced tomatoes, chopped cilantro or crushed tortilla chips.

Steps:

  • In a large saucepan, heat the olive oil over medium heat for 1 minute.
  • Add the onion and stir to coat. Continue to cook over medium heat for 5 minutes, stirring occasionally.
  • Add the garlic and cumin and continue to cook for 1 minute.
  • Add the vegetable broth, tomatoes, and pinto beans and bring to a boil.
  • Reduce to a simmer and continue to cook for 15 minutes.
  • Using an immersion blender, blend the soup until you've reached your desired consistency. I like to leave it a little bit chunky. Alternatively, if you don't have an immersion blender you can transfer 3 cups of soup to a blender and blend until smooth. Be careful when transferring hot liquid and be sure to allow steam to escape from the blender.
  • Add salt and lime juice, then divide into bowls.
  • Top with jalapeño, tortilla chips, tomatoes, or other desired toppings.

Categories     Side     Soup

Time 45m

Number Of Ingredients 14

1 tbsp olive oil
1 medium onion (diced)
1 (14 oz) can fire-roasted tomatoes ((see notes))
3 garlic cloves (minced)
2 small carrots (peeled and diced)
1 medium potato (peeled and diced )
1 tsp oregano (dried)
1 tsp ground cumin
1 tsp smoked paprika
Red pepper flakes (to taste)
2 bay leaves ((optional))
2 cups vegetable broth
2 (14 oz) cans pinto beans (drained and rinsed (see notes))
Salt and pepper (to taste)

Steps:

  • You can watch the video in the post for visual instructions.Heat oil in a large pot over medium/high heat. Add onion and sauté for about 4-5 minutes, stirring frequently.
  • Stir in the roasted tomatoes, garlic, carrots, potato, and all spices. Cook for 1-2 minutes, until fragrant, then pour in the vegetable broth (I also added 2 bay leaves for flavor).
  • Bring the soup to a boil and let it simmer with a lid for about 10-15 minutes. Add in the pinto beans and cook for a further 10 minutes or until the veggies are softened, stirring from time to time. Then turn off the heat.
  • You can add more veggie broth or water if you notice that too much liquid evaporated.
  • I poured about 50% of the soup into a different pot and used an immersion blender to blend it. You can also fill about half of the soup into a blender and blend it to the desired consistency.
  • Then pour the blended soup back into the large pot and stir to combine. Taste it and add more salt/pepper/spices if needed. You can also add a little lime juice.
  • Serve in bowls and garnish with fresh herbs. Enjoy!

SIMPLE PINTO BEANS

Simple Pinto Beans image

Pinto beans are emblematic of the Old West - good cheap hearty fare. These plain ones are good with just about anything or as a meal in a tin plate, cowboy-style, with a chunk of cornbread. For the best tasting beans, cook at a bare simmer, and keep the liquid level just 1 inch above the beans' surface as they cook.

Provided by David Tanis

Categories     side dish

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 7

1 pound pinto beans
1 small onion, halved
1 bay leaf
¾ pound slab bacon
1 tablespoon kosher salt
1 tablespoon paprika
1/4 teaspoon cayenne

Steps:

  • Pick over the beans for small rocks or debris. Rinse well, then cover with cold water and soak for 6 hours or overnight.
  • Transfer beans to a soup pot and add water to cover by 1 inch. Add onion, bay leaf and bacon and bring to a boil. Reduce heat to a bare simmer, partly cover pot with lid, and cook for 1 hour, stirring occasionally.
  • Stir in salt, paprika and cayenne, then continue simmering until beans are soft and creamy and the broth is well seasoned and lightly thickened, about 1 hour more. Remove bacon and chop roughly, then return to pot. (Dish may be prepared up to 2 days ahead.)

Tips:

  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more digestible.
  • Use a variety of vegetables: This will add flavor and nutrients to the soup. Some good choices include onions, carrots, celery, bell peppers, and tomatoes.
  • Use a ham bone or ham hock: This will add a smoky flavor to the soup. If you don't have a ham bone or hock, you can use smoked sausage or bacon instead.
  • Season the soup well: This will help to bring out the flavors of the ingredients. Some good seasonings to use include salt, pepper, garlic powder, and onion powder.
  • Simmer the soup for at least 30 minutes: This will help to develop the flavors and make the beans tender.
  • Serve the soup with your favorite toppings: Some good choices include sour cream, shredded cheese, diced avocado, and chopped cilantro.

Conclusion:

Pinto bean soup is a hearty, flavorful, and easy-to-make soup that is perfect for a cold winter day. It is also a great way to use up leftover ham. With a few simple ingredients and a little bit of time, you can make a delicious pot of pinto bean soup that the whole family will enjoy.
