PINTO BEAN PIE

Gammy (as my mom, Barbara Galloway, is known around here) loves to cook and be creative. It's a trait that was passed down from her father. Pinto Bean Pie is one of her favorite recipes to make, especially when she's planning special holiday meals. If you'd like to dress up each slice, top them with a dollop of whipped cream and a pecan. -Valerie Elijah, Dayton, Ohio

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS

Pinto Beans With Mexican-Style Seasonings image

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

Tips:

  • Use canned beans for convenience: Canned beans are a great time-saver and just as nutritious as dried beans. Simply rinse them well before using.
  • Season the beans well: Pinto beans can be bland on their own, so don't be afraid to season them liberally with garlic, onion, chili powder, and cumin. You can also add a touch of cayenne pepper for a little heat.
  • Don't overcook the beans: Pinto beans should be cooked until they are tender but still hold their shape. Overcooked beans will become mushy and bland.
  • Use a good quality cheese: The cheese is one of the most important ingredients in a pinto bean pie, so don't skimp on quality. Use a sharp cheddar cheese or a Mexican blend for the best results.
  • Serve the pie hot: Pinto bean pie is best served hot out of the oven. You can top it with sour cream, guacamole, or salsa for extra flavor.

Conclusion:

Pinto bean pie is a classic Tex-Mex dish that is easy to make and always a crowd-pleaser. With its creamy, cheesy filling and crispy crust, this pie is sure to be a hit at your next potluck or family gathering. So what are you waiting for? Give this recipe a try today!
