Time 30m

Yield 6 Servings

Number Of Ingredients 12

6 all-beef hot dogs
2 tablespoons extra-virgin olive oil
8 cremini mushrooms, sliced into 1/4-inch slices
1 small onion, halved and sliced thin from root to tip
1 small onion, halved and sliced thin from root to tip
1 red pepper, thinly sliced
1/4 teaspoon salt
1/4 teaspoon dried oregano
2/3 cup yellow cherry tomatoes, halved
1 cup shredded mozzarella
2 tablespoons unsalted butter, at room temperature
6 potato hotdog buns

Steps:

  • Heat a 10-inch saute pan over medium heat. Cook the hot dogs, browning them on all sides, until warmed through, about 5 minutes. Remove to a plate and keep warm while making the topping.
  • In the same pan, heat the olive oil over medium-high heat. Add the mushrooms to the hot pan and cook, stirring occasionally, until they begin to brown, 5 minutes. Add the onions and red peppers, and season with half of the salt and the oregano. Continue cooking, stirring occasionally, until the onions and peppers soften and begin to brown, about 8 minutes. Turn off the heat and add the tomatoes and the remaining salt. Stir with a rubber spatula just to combine and sprinkle the mozzarella on top to melt.
  • Preheat a grill pan or a broiler to medium-high heat. Spread some butter on each bun and grill or broil until golden, 1 minute. Place each dog in a toasted bun. Divide the pepper and cheese mixture evenly over the dogs, and serve.

  • Cook the hot dogs properly: To achieve the perfect balance of crispy on the outside and juicy on the inside, grill or fry the hot dogs until they are cooked through but not overcooked. Avoid boiling the hot dogs, as this will result in a bland and soggy texture.
  • Load up on the toppings: The beauty of the Pink's Guadalajara Dog lies in its abundance of toppings. Don't be shy about piling on your favorite toppings, such as bacon, cheese, guacamole, pico de gallo, and sour cream. The more toppings, the better!
  • Serve immediately: Hot dogs are best enjoyed fresh off the grill or out of the fryer. Serve the Pink's Guadalajara Dog immediately after assembling it so that the toppings stay crispy and the hot dog remains hot and juicy.
