PASTA ALLA VODKA

Pasta Alla Vodka image

There's no need to order takeout from your neighborhood restaurant when this beloved, easy-to-assemble Italian-American classic gets dinner on the table in no time. Adding pancetta brings a salty smokiness, but if you leave it out, you're still in for a quick and flavorful dish. If you're feeling ambitious, the pasta is delightful with Caesar salad or garlic bread, but it's also satisfying enough to take centerstage. Put on some Puccini, open up a bottle of red and you're guaranteed a more relaxed dining experience than the one you might get at the local red-and-white checkered-tablecloth joint.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
1 pound rigatoni or penne pasta
2 tablespoons olive oil
4 ounces diced pancetta, optional
1 medium yellow onion, finely chopped
2 garlic cloves, finely chopped
1/2 teaspoon red-pepper flakes
3/4 cup vodka
1 (28-ounce) can crushed tomatoes
Freshly ground black pepper
3/4 cup heavy cream
1/4 cup grated Grana Padano or Parmesan cheese, plus more for serving
1 tablespoon roughly chopped fresh oregano
2 tablespoons roughly chopped Italian parsley

Steps:

  • Bring a large pot of salted water to a boil (2 heaping tablespoons kosher salt to about 7 quarts water). Add the pasta and cook according to package instructions until al dente.
  • Meanwhile, prepare the sauce: Heat the oil in a deep 12-inch skillet or pot over medium. Add the pancetta, if using, and fry until crispy, stirring occasionally, 3 to 5 minutes. Add the onion, garlic and red-pepper flakes and cook, stirring occasionally, until onion is translucent, about 3 minutes. Turn the heat to medium-low, add the vodka and cook until reduced by half, 2 to 3 minutes.
  • Stir in the tomatoes and then fill the can halfway with water and swish it around to loosen up any leftover tomatoes; add a quarter to half of the water to the pan. Simmer until the sauce begins to thicken, about 10 minutes, and season with salt and pepper. If you prefer your sauce a little looser, go ahead and add the remaining water and simmer 2 to 3 minutes more. Reduce heat to low, add the cream and cook, stirring, until the sauce becomes an even pinkish-rust color, about 1 minute.
  • Stir in the cooked pasta and 1/4 cup cheese; toss to coat. Season to taste with salt and pepper. Divide among bowls, top with additional cheese, if desired, and sprinkle with the oregano and parsley.

PASTA WITH PINK VODKA SAUCE AND SAUSAGE

Pasta With Pink Vodka Sauce and Sausage image

This is one that I adopted from Emeril. It's actually a recipe I've been making for years and then found his. I always use a great quality hot turkey or hot chicken italian sausage for this and find that it's just as good as the real deal, however, the true recipe calls for real hot italian sausage. I make it a bit spicier and usually serve this with penne or farfalle. If I don't spice it up too much, even my 2 and 4 year old love this one.

Categories     One Dish Meal

Time 30m

Yield 6 , 6 serving(s)

Number Of Ingredients 13

1 lb spaghetti
2 tablespoons olive oil
1 lb hot Italian turkey sausage, casing removed and crumbled
1 cup yellow onion, chopped
1/2 teaspoon salt
1 pinch crushed red pepper flakes
6 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
6 tablespoons vodka
6 tablespoons heavy cream
3 tablespoons fresh basil, minced
1/2 cup parmigiano-reggiano cheese, freshly grated
1 sprig fresh basil, for garnish

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
  • Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

Tips for a Perfect Pink Vodka Sauce

  • Utilize high-quality vodka: While cheaper brands may suffice, investing in a decent brand will provide superior flavor to the sauce.
  • Don't simmer the vodka excessively: Avoid boiling the vodka for an extended period; a quick simmer is sufficient to remove the harsh alcohol taste while preserving its essence.
  • Use tomato sauce devoid of additional flavors: Steer clear of sauces with added spices or herbs, as these can overpower the delicate flavors of the sauce.
  • Select a flavorful cheese for a richer sauce; consider using a combination of parmesan and cream cheese.
  • Add cream for a creamier texture; heavy cream or half-and-half are suitable options.
  • Season to taste: Adjust the seasoning according to your preference; additional salt, pepper, and garlic powder can enhance the flavors.
  • Don't overcrowd the pan with pasta: Overloading the pan can hinder the sauce from properly coating each noodle; cook the pasta in batches if necessary.
  • Garnish with fresh herbs for an extra burst of flavor: Parsley, basil, chives, or thyme are all excellent choices.

Conclusion

Indulge in the delightful simplicity of this pink vodka sauce, a versatile culinary creation that elevates any pasta dish to new heights. With a delicate balance of creamy tomato sauce, a hint of vodka, and a touch of herbs, this sauce promises an unforgettable dining experience. Follow these tips to ensure a flawless execution and enjoy a mouthwatering symphony of flavors that will leave your taste buds dancing for joy.
