4 tablespoons tomato puree
¾ cup water
1 cup heavy cream
1 ½ teaspoons grated fresh ginger root
¼ teaspoon cayenne pepper
4 teaspoons lemon juice
1 teaspoon ground cumin
1 teaspoon salt
ground black pepper to taste
½ teaspoon white sugar
3 tablespoons vegetable oil
1 tablespoon mustard seed
2 cloves garlic, chopped
2 pounds medium shrimp - peeled and deveined
salt to taste
ground black pepper to taste

Steps:

  • Place tomato puree in a measuring cup. Add enough water to make a total measure of 1 cup, place in a medium bowl. Stir in cream, ginger, cayenne pepper, lemon juice, cumin, 1 teaspoon salt, black pepper to taste, and sugar. Cover and refrigerate until needed.
  • Heat oil in a large frying pan over a medium-high heat. Add the mustard seeds. As soon as they begin to pop, add the garlic. Stir once and add the shrimps. Stir and fry until they just turn opaque, sprinkling with salt and pepper to taste.
  • Pour in the pink sauce and stir. As soon as the sauce is bubbling, the dish is ready to be served with hot cooked pasta or rice.

This is one that I adopted from Emeril. It's actually a recipe I've been making for years and then found his. I always use a great quality hot turkey or hot chicken italian sausage for this and find that it's just as good as the real deal, however, the true recipe calls for real hot italian sausage. I make it a bit spicier and usually serve this with penne or farfalle. If I don't spice it up too much, even my 2 and 4 year old love this one.

1 lb spaghetti
2 tablespoons olive oil
1 lb hot Italian turkey sausage, casing removed and crumbled
1 cup yellow onion, chopped
1/2 teaspoon salt
1 pinch crushed red pepper flakes
6 garlic cloves, minced
1 (28 ounce) can crushed tomatoes
6 tablespoons vodka
6 tablespoons heavy cream
3 tablespoons fresh basil, minced
1/2 cup parmigiano-reggiano cheese, freshly grated
1 sprig fresh basil, for garnish

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the pasta and cook until just al dente, 5 to 6 minutes. Drain in a colander and return to the saucepan.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the sausage and cook, stirring, until browned and all pink has disappeared, 3 to 4 minutes. Add the onions, salt, and red pepper flakes and cook, stirring, until the onions are soft and golden, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds. Add the tomatoes and cook, stirring, until thick, about 2 minutes. Add the vodka and cook until the sauce reduced by half, 3 to 4 minutes. Stir in the cream and cook until the sauce thickens, about 2 minutes. Stir in the basil and remove from the heat.
  • Toss the sauce with the pasta to coat evenly and transfer to a pasta bowl for serving. Top with cheese and sprig of basil and serve immediately.

¼ cup olive oil
4 cloves garlic, minced
1 cup dry white wine
3 tablespoons tomato paste
1 ½ pounds medium shrimp - peeled, deveined, and cut into 1/2-inch pieces
1 cup heavy whipping cream
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes. Drain.
  • Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir wine and tomato paste together in a small bowl; add to the saucepan. Simmer over low heat until sauce starts to thicken, about 10 minutes. Stir shrimp into the sauce. Cook until shrimp are pink, 3 to 5 minutes.

6 ounces dry penne pasta
3 boneless skinless chicken breasts
2 tablespoons olive oil
salt
fresh ground black pepper
1 cup coarsely chopped prosciutto
1/2 medium green bell pepper, cut into 1 x 1/4 inch strips
1/2 medium yellow bell pepper, cut into 1x 1/4 inch strips
3 tablespoons drained capers
1 teaspoon dried basil, crushed
1 (15 ounce) jar marinara sauce (or homemade)
1 (10 ounce) jar alfredo sauce
1/3 cup grated parmesan cheese

Steps:

  • Cook the pasta according to package directions; drain well.
  • Return the pasta to the pot and set aside.
  • Coat the chicken breasts with 1 tablespoon olive oil and season with salt and pepper.
  • Place the chicken on a foil-lined baking sheet and bake in a preheated 350°oven for 15-20 minutes or until cooked through.
  • Remove the pan from the oven and let the chicken cool.

  • Put the remaining penne mixture over the sauce, then add the remaining sauce.
  • Sprinkle the top with Parmesan cheese.
  • Bake for 25-30 minutes or until the cheese is melted and slightly browned and the casserole is heated through.
  • Remove the pan from the oven and toss the pasta thoroughly.

1 medium onion, chopped
1 tablespoon olive oil
4 garlic cloves, pressed
1 lb tomatoes, chopped
1 large red bell pepper, chopped (about 8 oz.)
1/8-1/4 teaspoon crushed red pepper flakes
salt & freshly ground black pepper, to taste
2 -3 tablespoons vegetable stock (optional) or 2 -3 tablespoons water (optional)
2 tablespoons fresh basil leaves, chopped
1 lb penne (a 450-500 g box- I mix regular and whole wheat, and I think it tastes best that way)

Steps:

  • You can make this sauce ahead of time, and it actually tastes better the next day. Only cook enough pasta for the day you are serving it, and serve any leftover sauce with freshly cooked pasta.
  • In a skillet, soften the onion in a little water over medium heat. Add the oil and garlic, and saute them, stirring often, till they are starting to caramelize.
  • Add the tomatoes, pepper, crushed red pepper and salt/pepper if desired. Raise heat till juices are bubbling. Then turn it down to low and simmer 15-20 minutes, till the bell pepper is well-softened.
  • In the meantime, start your pasta cooking in a large pot.
  • Transfer the mixture to a food processor and blend, adding a few tablespoons of stock or water as needed to make a smooth sauce. Return to the skillet, stir in the basil, cover and keep warm.
  • Drain pasta and return it to the pot. Pour in the sauce and stir to coat. Serve with a sprinkle of coarse salt and freshly ground black pepper, and a salad.

6 links Italian sausage
3/4 cup feta cheese
3/4 cup goat cheese
3/4 cup parmesan cheese
1 lb pasta, of your choice
1 teaspoon black olive tapenade
1 medium sweet onion
1 cup half-and-half cream
2 tablespoons olive oil
2 tablespoons butter

Steps:

  • In a large pot, start your water and dash of salt boiling for your pasta.
  • In a separate non-stick pot, On medium/high heat add your olive oil, butter, and sausage links. Remove when done and set aside.
  • On medium heat, add chopped onion. Cook until clear. Put pasta into boiling water.
  • Add 1/2 & 1/2, tapenade, & all 3 cheeses. Stir until cheeses melt and sauce it smooth.

This is a delicious dish that has evolved over the years since I have been making it. I use angel hair pasta and the finished product I am aiming for is a 'dry' pasta dish. That is, the pasta should be coated and flavoured by the sauce, but not swimming in it. It is a very economical dish that produces a luxurious tasting result!

250 g onions (chopped)
250 g carrots (chopped)
2 sticks celery (chopped)
6 garlic cloves (chopped)
3 tablespoons extra virgin olive oil
1/2 cup dry white wine
1 (400 g) can crushed tomatoes
415 g canned pink salmon (flaked)
400 g angel hair pasta
fresh herb (oregano, rosemary, thyme or basil)
salt and pepper (to taste)
100 g romano cheese
1/2 teaspoon hot chili flakes (optional)

Steps:

  • Fry chopped onion, carrot, celery and garlic in ev olive oil until soft but not coloured. Add white wine and allow to completely cook away. Add tomatoes and simmer for at least an hour. Season with herbs of your choice and salt and pepper. Boil angel hair pasta in salted boiling water until done to your liking. Drain pasta.
  • Now I combine the sauce, pasta and pink salmon in the following manner. I use this method because I want to produce a pasta that is only 'coated' in sauce, not 'swimming' in it. I place a saucepan over low heat and add alternate quantities of pasta and the tomato sauce and toss together until well combined. I only add enough sauce to the pasta to colour and lightly coat the pasta. When I am happy with the balance, I add the flaked salmon, tossing it through the pasta until it is all combined.
  • Serve topped with parmesan or romano cheese and torn fresh basil leaves, and hot chilli (pepper) flakes if you like. Delicious!
  • Enjoy.

Steps:

  • Fry chopped onion, carrot, celery and garlic in extra virgin olive oil until soft but not coloured. Add white wine and allow to completely cook away. Add tomatoes and simmer for at least an hour. Season with herbs of your choice and salt and pepper. Boil angel hair pasta in salted boiling water until done to your liking. Drain pasta. Now combine the sauce and pasta . Only add enough of the tomato sauce to the pasta to colour and lightly coat the pasta. Toss together until evenly coated. When you are happy with the balance, add the flaked salmon, tossing it through the pasta until it is all combined. 1/2 cup chopped canned tomatoes in puree
2 cups heavy cream
1/2 cup freshly grated pecorino romano cheese
1/2 cup coarsely shredded fontina
2 tablespoons ricotta cheese
1 1/2 teaspoons kosher salt
1 lb imported pasta shells (conchiglie rigate)
4 tablespoons unsalted butter

Steps:

  • Preheat oven to 500°.
  • Bring 5 quarts of water to a boil in a big pot.
  • Halve the peppers, remove the seeds, and puree them in a blender; you should have about 1 cup puree.
