This is from Jessica Seinfeld's Cookbook called Deceptively Delicious. I have not tried this, but am posting recipes for others. When I do make them, I will make a version that does not use pancake mix and share my results.

Time 15m

Yield 2-4 serving(s)

Number Of Ingredients 12

3/4 cup water
1/2 cup ricotta cheese
1/4 cup beet, puree
1 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1 cup pancake mix
1/4 cup grated apple
nonstick cooking spray
1 tablespoon vegetable oil
pure maple syrup (optional)
fresh fruit (optional)
powdered sugar (optional)

Steps:

  • In a blender or food processor, combine the water, ricotta cheese, beet puree, vanilla, and cinnamon.
  • Dump the cheese mixture into a medium bowl, add the pancake mix and apple. Stir until just combined. Do not overmix, you want the batter to be lumpy.
  • Coat a griddle with nonstick spray and heat to medium high. Add 1/2 tsp vegetable oil. Use 1/4 cup of batter at a time and pour out pancakes. When you see bubbles start to form, it is time to flip the pancake. If the bottom is too brown, turn the heat down. It should take about 1 to 2 minutes per side.
  • Serve warm, garnish with maple syrup, fresh fruit, and powdered sugar.

Number Of Ingredients 6

1 15 oz tub cottage cheese (or ricotta)
4-5 beets, boiled
1 apple, grated
2 teaspoons cinnamon
1 teaspoon vanilla
Pancake Mix (2-3 cups, depends on consistency)

Steps:

  • Wash & trim stems off beets. Put in pan to boil, add water to cover 3/4, cover with a lid and boil until tender. Let liquid & beets cool. pink2While waiting for beets to cool, grate 1 apple. Add apple and cottage cheese to blender, add beets and beet juice. Blend until a smooth pink puree. Mix dry ingredients, pancake mix & cinnamon. (If pancake mix calls for eggs, add eggs at this point). Stir in pink puree and vanilla until well blended. Add water, or pancake mix to adjust consistency. Cook on griddle at 300* to 350*, adjusting accordingly.pink4 Serve with coconut oil, powdered sugar, yogurt, fruit, etc

Tips:

  • Use fresh, high-quality ingredients: This will ensure that your pancakes are flavorful and delicious. Choose fresh berries for the best results.
  • Don't overmix the batter: Overmixing will make the pancakes tough. Mix just until the ingredients are combined.
  • Let the batter rest for a few minutes before cooking: This will allow the gluten in the flour to relax, resulting in lighter, fluffier pancakes.
  • Cook the pancakes over medium heat: This will prevent them from burning. Cook for about 2-3 minutes per side, or until golden brown.
  • Serve the pancakes immediately with your favorite toppings: Butter, syrup, fruit, and whipped cream are all popular choices.

Conclusion:

Pink pancakes are a fun and easy way to add a touch of color to your breakfast. They're also delicious and versatile, so you can enjoy them with a variety of toppings. Whether you're looking for a special treat for a holiday or a fun weekend breakfast, pink pancakes are sure to please.
