A bit different than the other Pink Arctic Freeze recipe on this site - I got this recipe from my grandmother. It was a staple at the Thanksgiving or Christmas table.

2 (3 ounce) packages cream cheese
2 tablespoons mayonnaise
2 tablespoons sugar
1 (12 ounce) can whole berry cranberry sauce
1 (9 ounce) can crushed pineapple, drained
1/2 cup walnuts, chopped
1 cup whipping cream, whipped

Steps:

  • Soften cheese.
  • Blend in mayonnaise and sugar.
  • Add fruits and nuts.
  • Fold in whipped cream.
  • Pour into 8 1/2" x 4 1/2" x 2 1/2" loaf pan.
  • Freeze firm, 6 hours or overnight.
  • To serve, let stand at room temperature about 15 minutes. Turn onto lettuce. Slice.

8 oz Cool Whip
14 oz Mandarin Oranges (drained)
20 oz Crushed pineapple (drained)
3 oz box red jello (dry)
Pecans (as desired)
16 oz Jar Maraschino Cherries

Steps:

  • Drain pineapple and mandarin oranges.
  • Add fruit to large mixing bowl.
  • Add cottage cheese and cool whip. Stir until thoroughly mixed.
  • Add in the dry Jello mix and stir thoroughly until the salad is a light pink color.
  • Put in covered dish and chill for at least one hour in the fridge.
  • When ready to serve garnish with pecans and cherries.

1 pkg cream cheese
1 qt strawberry ice cream
1/2 c mayonnaise
2 can(s) fruit cocktail, canned
1/3 c chopped nuts

Steps:

  • 1. Combine softened cream cheese, ice cream and mayonnaise. Mix until well blended.
  • 2. Fold in fruit and chopped nuts. Pour into 9 in. square pan.
  • 3. Freeze until firm. Place in refrigerator 15 minutes before serving. Cut into squares. Garnish with cherries and mint leaves if desired.

1 cup pineapple, crushed
