1 stick butter
1/2 cup all-purpose flour, more or less to taste

1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

1 large can round pineapple
1 small jar marachino cherries drained
1 Tbsp ground cloves
1 c brown sugar
1/4 c butter
1 6 oz can pineapple juice
1 c white wine
2 c water
1/4 c flour
1/2 c water

Steps:

  • 1. Place ham in roasting pan on a rack. Take the round pineapple and drain reserving the juice and with toothpicks place them on the ham. In the middle of the pineapple rounds place a marachino cherry.
  • 2. Place butter, reserved pineapple juice, the canned pineapple juice, wine, brown sugar and 2 cups water in roaster. Roast at 350 degrees until the internal temp of ham is 140 degrees.
  • 3. Place the pan drippings in a saucepan. bring to a boil. Mix the flour and water together and whisk into the gravy until thickened

1 whole, shank or butt smithfield low sodium ham
1 can(s) water packed pineapple rings
1 c brown sugar, firmly packed
1 jar(s) maraschino cherries
GRAVY
1/4 c all purpose flour
1/4-1/2 c water
kosher salt and freshly ground black pepper to taste
few dash(es) kitchen bouquet or gravy master for color

Steps:

  • 1. Preheat oven to 325-degrees. Trim ham and score. Place in an open roasting pan with 1 cup water.
  • 2. Bake 12 minutes per pound. Meanwhile, drain pineapple, reserving juice. Mix pineapple juice and brown sugar to make the glaze for the ham.
  • 3. The last hour of baking remove ham from oven and arrange pineapple rings and cherries. Secure with toothpicks. Pour half the glaze over ham and return to oven.
  • 4. Baste several more times with the glaze, using it all up.
  • 5. Remove ham from oven and transfer to either a cutting board or serving platter. While ham is resting skim as much grease as possible from ham drippings in pan.
  • 6. Mix water and flour together along with salt and pepper in a jar or Tupperware shaker. Slowly add to the remaining drippings in the pan. Stirring to make sure all flour is dissolved. Bring to a boil to thicken. If gravy is too thick, add water to thin to desired consistency. If too runny make up a bit more flout and water. Add a couple dashes Kitchen Bouquet or Gravy Master to get desired color.
  • 7. Serve with mashed potatoes and wait for the oohs and ahhs.

3 tablespoons drippings, from ham
1 medium sliced onion, that was cooked with the ham
2 tablespoons butter
6 cloves garlic, finely chopped
1/3 cup dry red wine
2 tablespoons all-purpose flour
1 cup water
1 teaspoon ground rosemary or 1 tablespoon of chopped fresh rosemary
3/4 cup crushed pineapple, drained
1/3 cup golden seedless raisins
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup chicken broth
1 tablespoon Dijon mustard

Steps:

  • After roasting ham, remove ham to a platter, pour off fat and juices from roaster reserving 3 tablespoons and discarding the remainder.
  • Return the 3 tablespoons of fat/juices to the roasting pan.
  • Discard the crisp outer layers of onions, leaving the soft portions in the pan.
  • Add butter and garlic and cook over moderately low heat, scraping the onion and browned bits from the bottom of the roaster.

1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
