- Stir the water chestnuts together with the garlic powder and soy sauce in a small bowl. Set aside to marinate for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
- Drain the water chestnuts, discarding the soy sauce. Place a pineapple chunk in the center of each piece of bacon, then place a water chestnut on top of that. Fold the ends of the bacon over the water chestnut, and secure with a toothpick. Repeat with the remaining bacon, pineapple, and water chestnuts. Gently toss the bacon-wrapped chestnuts with brown sugar in a bowl, then place onto the prepared baking sheet.
- Bake in the preheated oven for 25 minutes, then turn the pieces over, and continue baking 15 to 35 minutes longer until the bacon has cooked to your desired degree of doneness. Briefly drain on a paper towel-lined plate, and serve hot.

When I was in Hawaii, the hotel I stayed in always had a large dispenser of this water in the lobby, to help rehydrate the guests after they spent too much time on the beach. I found it to be much more refreshing than plain water, as the fruit adds a very subtle sweet taste. A great recipe if you're trying to get more water into your diet. This will not taste like fruit juice, it's meant to be a very lightly flavored water. If you don't have a large drink dispenser, try making 1/2 recipe in a sun tea jar.

- Cube zucchini for chunk or shred for crushed pineapple. The shredded with fill less jars then chunk.
- Place the shredded zucchini in a strainer for 15 minutes. Squeeze out excess water.
- Or place the cubed zucchini in a strainer and lightly salt, toss and let sit 20 minutes. Then rinse and drain weel twice. Dry with papare towels.
- While the zucchini is draining place juices, sugar, salt, and food coloring in a large pot and bring to a boil.
- Add shredded zucchini to pot and bring back to a boil for 25 minutes. cubed zucchini for 40.
- Then add extract and rum if using cook for 5 more minutes.
- Fill hot sterilized jars with hot mixture and cooking liquid, leaving 1/2 inch head space.
- Remove air bubbles.
- Wipe jar rims.
- Adjust lids.
- Process in a boiling water bath.
- Half-pints or pints for 15 minutes.
- You should get 16 jars shredded with this recipe or 10 jar cubed.
- With the cubed you`ll have extra syrup left, do save it for making mixed drinks.
