- Place the cinnamon stick, cloves and cardamom on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag., In a large saucepan, combine the apple cider, pineapple juice, apricot nectar and orange juice. Add spice bag. Bring to a boil. Reduce heat; simmer, uncovered, for 15-20 minutes or until flavors are blended. Discard spice bag. Stir in rum if desired. Serve warm.

- Bring the water to a boil in a saucepan. Add tea bags and cover; steep 10 minutes and discard tea bags.
- Add the remaining ingredients in the saucepan. Cook over medium-low heat for 15 minutes or until well heated.
- Discard cloves and cinnamon stick and pour into mugs.
Tips:
- To make a non-alcoholic wassail, omit the apple cider vinegar and use apple juice instead.
- You can also use cranberry juice or orange juice in place of the apple cider.
- For a sweeter wassail, add more honey or sugar to taste.
