Embark on a culinary journey with our delightful pineapple-stuffed dishes, where tropical flavors dance harmoniously with succulent fillings. Discover two enticing recipes: one tantalizingly filled with chicken and the other bursting with pork. These dishes promise an explosion of taste, combining the natural sweetness of pineapple with savory, tender meats.
The chicken-stuffed pineapple recipe offers a symphony of flavors, where juicy chicken breasts marinate in a blend of zesty herbs and spices, infusing every bite with tantalizing aromas. Nestled inside the pineapple halves, the chicken roasts to perfection, absorbing the pineapple's sweet and tangy juices, resulting in a moist and flavorful main course.
The pork-stuffed pineapple recipe, on the other hand, showcases the rich, savory notes of tender pork shoulder. Slow-cooked until melt-in-your-mouth perfection, the pork is seasoned with a delightful blend of garlic, cumin, and paprika, creating a harmonious balance of flavors. Stuffed into pineapple halves, the pork roasts until caramelized and slightly charred, offering a delightful contrast of textures.
Both recipes are adorned with a vibrant medley of colorful bell peppers, onions, and pineapple chunks, adding sweetness and crunch. Served over a bed of fluffy rice or quinoa, these pineapple-stuffed dishes make for an impressive and unforgettable meal, perfect for entertaining guests or enjoying a special family dinner.
SWINEAPPLE
Before they even taste this salty-sweet mashup, your guests will be circling the grill thanks to the irresistible aroma of slow-cooking bacon and pineapple. The barbecue pork ribs tucked inside become tender as they braise in their own juices. Served sliced across the middle, the swineapple is a sight to behold.

Steps:
- Prepare a grill for medium indirect heat: For a gas grill (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners and turn the remaining burners down to medium. For a charcoal grill, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Slice off the top and bottom of the pineapple with a sharp knife and set the pieces aside. Remove the peel from the pineapple, cutting it off in strips. Using a paring knife, carefully hollow out the pineapple to a 3/4-inch-thick shell.
- Stuff the pineapple with the ribs. Place the top and bottom pieces back on the pineapple and secure them in place with 4 long bamboo skewers.
- Place a large piece of parchment on your work surface. Arrange 6 slices bacon horizontally on the parchment. The edges of the slices should touch but not overlap. Working with the remaining 6 slices, weave the bacon in an over-under pattern by lifting alternating slices of the horizontal bacon and vertically placing a slice of bacon over or under as needed to create a woven lattice design. Wrap the bacon lattice around the pineapple and secure it in place with 8 long bamboo skewers. Trim the protruding skewer tips down to 1/2 inch lengths with kitchen shears.
- Put the swineapple on the grill over the drip pan with the bacon seam-side down. Cover the grill and cook until the bacon is crispy and golden brown and the meat is hot in the center, about 1 hour. Transfer to a cutting board. Remove the skewers and slice the pineapple into rings for serving.

Tips:
- Choose ripe, firm pineapples with a vibrant yellow color and a sweet aroma.
- To easily cut the pineapple, slice off the top and bottom, then use a sharp knife to cut the skin vertically, following the natural grooves of the fruit. Scoop out the flesh, leaving a 1-inch thick shell.
- For the chicken or pork filling, use boneless, skinless breasts or tenderloin. Cut the meat into small pieces or strips for even cooking.
- Season the meat with your favorite spices and herbs. A simple combination of salt, pepper, garlic powder, and paprika works well.
- Use a variety of vegetables in the filling, such as chopped celery, carrots, bell peppers, mushrooms, or water chestnuts. This adds flavor and texture to the dish.
- To make the sauce, use a combination of soy sauce, rice vinegar, sesame oil, and honey. Adjust the proportions to taste, and add a touch of cornstarch or arrowroot powder to thicken the sauce, if desired.
- Stuff the pineapple shells with the chicken or pork filling, then top with the sauce. Bake in a preheated oven until the meat is cooked through and the sauce is bubbling.
