At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour
3/4 cup sugar

2 whole eggs
1 cup butter or 1 cup margarine
3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
  • Dough:.
  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.

2 - 3 oz boxes - island pineapple jello
1 - 20 oz can, crushed pineapple - drained well - reserving juice
1 - 8 oz cream cheese - softened
water
1/2 c chopped pecans

Steps:

  • 1. Drain pineapple well. Reserving juice and add water to it to make 2 1/4 cups of liquid.
  • 2. In a medium bowl, mix cream cheese with dry jello, until well combined.
  • 3. Bring pineapple liquid to a boil and combine with the cream cheese mixture. Stir until jello and cream cheese are dissolved. Refrigerate until jello is almost set, but still a little jiggly. About 1 1/2 - 2 hours.
  • 4. Add the pineapple and nuts and stir well to combine. Pour mixture into an 8 inch pan and spread evenly.
  • 5. Cover and refrigerate for at least a few hours until set well. Cut into squares and serve with a dollop of whipped cream if desired.

2/3 cup applesauce
2 cups all-purpose flour
1 teaspoon baking soda

1 -1 1/2 cup crushed pineapple (juice drained and set aside)
additional pineapple juice, as needed
2 tablespoons pineapple juice (from the pineapple)
1 cup confectionars sugar

Steps:

  • Combine the first 6 ingredients until well mixed.
  • If it gets too thick, add a little bit of pinapple juice.
  • Add the pineapple mix until well combined (use more juice as needed).
  • Pour into a greased pan and bake at 350 for 25-30 minutes.
  • Take them out of the oven before the top starts to brown.
  • They will stay moist longer if they are slightly undercooked.
  • Cool.
  • Combine powdered sugar with pineapple juice and spread on top of bars.

1 1/3 cups flour
1 cup pecans, chopped
1 pinch cinnamon
2 (8 ounce) packages cream cheese, softened

2 eggs
2/3 cup pineapple juice, unsweetened
1/4 cup flour
1/4 cup sugar
1 (12 ounce) can pineapple, crushed and drained, reserve juice
1 cup reserved pineapple juice
1/2 cup whipping cream

Steps:

  • First bake crust.
  • Cream butter and brown sugar until light and fluffly. Add flour, pecans and cinnamon. Mix well.
  • Press crust into bottom of 13 x 9 greased baking pan.
  • Bake at 350 for 20 minutes.
  • Filling. Beat cream cheese in bowl until smooth and fluffly, beat in 1/2 cup sugar and the eggs. Stir in 2/3 cup of juice.
  • Pour cream cheese mix over hot crust. Bake just until center is set, about 20 minutes.
  • Cool completely.
  • Topping. Mix flour and 1/4 cup of sugar in a sauce pan. Stir in 1 cup of saved pineapple juice. Heat to boiling, stirring constantly.
  • Boil and stir 1 minute. Remove from heat, fold in drained pineapple. Cool completely.
  • Beat whipping cream in chilled bowl until stiff. Fold into pineapple mixture.
  • Spread carefully over dessert.
  • Cover loosely and refrigerate until firm, about 4 hours.
  • Cut into squares.

1/2 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 egg yolk, lightly beaten
1 (30 ounce) can pineapple chunks, undrained
2/3 cup milk
1 teaspoon sugar
1 (1/4 ounce) package fleishchmann's active dry yeast
1/4 cup very warm water
4 egg yolks, lightly beaten
4 cups sifted flour
1 cup butter or 1 cup baking margarine

Steps:

  • Mix 1/2 cup sugar, cornstarch and salt in saucepan. Stir in egg yolk and pineapple chunks. Cook over medium heat, stirring constantly, until thick and smooth, about minutes. Cool to lukewarm while preparing dough. Scald milk; add 1 teaspoon sugar; cool to lukewarm. Dissolve Fleischmann's Yeast in very warm water; add to milk mixture. Stir in beaten egg yolks. Measure flour into large bowl. Cut margarine into flour using pastry blender or 2 knives until mixture resembles coarse meal. Stir in yeast and milk mixture; blend thoroughly. Dough will be soft and moist. Divide in half. Roll half out on floured board to fit bottom of jelly roll pan and overlap edges, about 16 x 10 inches. Spread with cooled pineapple filling. Roll remaining dough large enough to cover filling. Seal edges. Snip surface of dough with scissors to let steam escape. Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour. Bake at 375ºF oven for 35-40 minutes. Frost with confectioners; sugar icing. Serve warm.

1/2 cup brown sugar
1 teaspoon baking powder
1/2 cup margarine
2 large egg yolks, beaten, save whites for topping
1 teaspoon vanilla
1 (20 ounce) can crushed pineapple
1/2 cup sugar
2 -3 tablespoons cornstarch
2 -3 tablespoons water, enough to blend the cornstarch
2 large egg whites, beaten stiff
4 tablespoons sugar
1/2 cup coconut

Steps:

  • BASE In a bowl combine the flour, brown sugar, and baking powder and mix with whisk.
  • Cut in the margarine, mix in the egg yolks and vanilla.
  • Press into a greased 8x8 pan. (original recipe calls for an 8x8 pan - I like using a 9x13 for daintier slices).
  • FILLING In a saucepan add the crushed pineapple (do not drain) add the sugar and carefully bring to a boil, turn down heat stir to dissolve the sugar.
  • Mix the cornstarch and water and add slowly, stirring all the while, adding amount of cornstarch needed to thicken the mixture.
  • Cook until thickened, be sure mixture is thickened before removing from heat, spread the thickened pineapple mixture over the base.
  • Bake in a 350° oven for 20 minutes and remove from oven.
  • Beat the egg whites until stiff, beating in 4 tablespoons sugar one tablespoon at a time and fold in the coconut.
  • Spread over the cake and return to oven bake until golden brown as you would meringue.
  • Cool and set before cutting.

Tips:

  • To ensure the pineapple squares have a chewy texture, make sure to not overmix the batter. Overmixing can result in a tough texture.
  • For a crispy crust, press the pineapple mixture firmly into the bottom of the baking pan before pouring in the batter.
  • If you don't have a 9x13 inch baking pan, you can use a 10x15 inch pan, but you will need to adjust the baking time accordingly. For a 10x15 inch pan, bake the bars for 20-25 minutes or until a toothpick inserted into the center comes out clean.
