2 1/2 cups low-fat chicken broth
1 (14 ounce) can pineapple chunks in juice, undrained
1 1/2 cups uncooked long grain white rice
3/4 cup carrot, finely chopped
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/3 cup ketchup
2 tablespoons brown sugar
2 tablespoons soy sauce
2 tablespoons vinegar
3/4 cup chopped green onion (optional)

Steps:

  • Spray a large saucepan or skillet with nonstick spray.
  • Add chicken cubes.

1 tablespoon olive oil
4 skinless, boneless chicken breast halves
1 tablespoon lemon juice
1 tablespoon butter
1 teaspoon orange zest
½ cup dark rum
¼ cup brown sugar
1 tablespoon onion powder
½ teaspoon ground ginger
1 pinch ground white pepper
salt to taste
1 yellow bell pepper, chopped
1 red bell pepper, chopped

Steps:
