Tips:

  • Use ripe pineapples. The riper the pineapple, the sweeter and more flavorful your scotchies will be. Look for pineapples that are golden yellow in color and have a slightly sweet smell.
  • Grate the pineapple yourself. Pre-shredded pineapple can contain added sugars and preservatives. Grating the pineapple yourself ensures that you're using fresh, unsweetened pineapple.
  • Don't overmix the batter. Overmixing the batter will make your scotchies tough. Mix just until the ingredients are combined.
  • Let the scotchies cool completely before cutting them. This will help them hold their shape and prevent them from crumbling.
  • Store the scotchies in an airtight container at room temperature for up to 3 days. You can also freeze the scotchies for up to 2 months.

Conclusion:

Pineapple scotchies are a delicious and easy-to-make treat that are perfect for any occasion. They're made with simple ingredients that you probably already have on hand, and they can be ready in just over an hour. So next time you're looking for a sweet treat, try making a batch of pineapple scotchies. You won't be disappointed!
