Pineapple Rice Cream Salad image

A sweet and fluffy Jello salad. The rice and pineapple add interesting texture. This is a great summer salad! The recipe is adapted from a local cookbook, contributed by a New Zealand foreign exchange student. Cook time is chill time.

Tips:

  • Use ripe pineapple. The riper the pineapple, the sweeter and more flavorful the ice cream will be.
  • Use full-fat coconut milk. Full-fat coconut milk will give the ice cream a richer, creamier texture.
  • Don't overcook the rice. Overcooked rice will make the ice cream grainy.
  • Let the ice cream chill for at least 4 hours before serving. This will allow the flavors to meld and the ice cream to firm up.
  • Serve the ice cream with fresh pineapple or other tropical fruits.

Conclusion:

Pineapple rice cream is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, tart, or somewhere in between, pineapple rice cream is sure to please everyone.
