Creamy Pineapple Raita is the perfect side dish with Indian curries!

1 cup yogurt
½ cup + 2 tablespoons pineapple (chopped)
¼ teaspoon cumin powder
⅛ teaspoon smoked paprika
¼ teaspoon mint flakes (more to sprinkle)
¾ teaspoon sugar
¼ teaspoon black salt
10 coriander leaves

Steps:

  • Measure 1 cup of yogurt in a strainer and let it sit for 15 minutes. This is to drain excess water from the yogurt.
  • After 15 minutes, transfer the yogurt to a bowl and add black salt, smoked paprika, mint flakes, cumin powder and sugar.
  • Whisk the yogurt till spices are well mixed.
  • Add the chopped pineapple pieces to the yogurt and mix.
  • Finally add some chopped coriander leaves and mix.
  • Pour the raita into serving bowl and garnish with chopped pineapple pieces.
  • Sprinkle some mint flakes on top and chill the raita before serving.

2 cups pineapple chunks
2 tablespoons sugar
2 cups thick yogurt
1/4 teaspoon chili powder
1/4 teaspoon ground black pepper
1/4 teaspoon roasted cumin powder
1/2 teaspoon black salt
1 tablespoon dried (crushed mint leaves (or use fresh ones))
1/4 cup chopped cilantro (optional)
1/4 cup pomegranate arils (optional)

Steps:

  • Place a pan over medium heat and add pineapple chunks and sugar.
  • Cook for about 2-3 minutes and turn the pineapple chunks once. Shake the pan to allow the caramelized sugar to coat the pineapple nicely. Cook for another 2-3 minutes till the pineapple turns golden brown.
  • Whisk the yogurt till it is smooth. Add the remaining ingredients (chili powder, pepper powder, black salt, roasted cumin powder, and mint leaves) and mix well.
  • Do a taste test and adjust the seasonings as needed. Refrigerate for an hour.

1/4 cup granulated sugar
3/4 cup pureed pineapple
1 cup pineapple cubes (1/4 inch cubes)
2 cups plain yogurt (dahi)
1/2 teaspoon cumin powder
1/2 teaspoon black salt (kala namak)
1/4 teaspoon red chili powder
1/2 teaspoon salt
2 tablespoons chopped cilantro (coriander)

Steps:

  • Add water, sugar, and pineapple puree to a saucepan and cook on medium heat for 3-4 minutes. Stir frequently while cooking.
  • Add pineapple cubes and cook for another 3-4 minutes.
  • Remove the pan from the heat and let the mixture cool down completely.
  • Whisk yogurt in a mixing bowl until creamy and smooth.

1/4 teaspoon mustard seeds
1/2 teaspoon ginger, grated
1/2 cup canned pineapple, finely chopped
2 tablespoons pineapple syrup, from the can
1 cup yogurt, beaten till smooth
salt
1/4 teaspoon red chili powder, to taste
3 -4 curry leaves

Steps:

  • Heat oil in a pan.
  • Add mustard seeds.
  • Allow to splutter.
  • Once they stop spluttering, add ginger, chopped pineapple and the pineapple syrup.
  • Simmer on low heat for 3 minutes or until thick.
  • Remove from heat.
  • Allow to cool.
  • Pour into a bowl that has the beaten yogurt.
  • Add salt, red chilli powder and curry leaves.
  • Mix well.
