I'll admit that some of my creations were not as tasty as I had wished but, this Paradise Cookie turned into a keeper. I love all of the flavors separately and in combination. Give them a try. Number Of Ingredients 11

4 1/2 c all purpose flour
2 tsp baking soda
2 tsp salt
1 1/2 c butter, softened
1 1/2 c granulated sugar
1 1/2 c brown sugar, packed
2 tsp banana extract
4 large eggs
1 c vanilla or white chocolate chips
1 c coconut, shredded
1 c dried pineapple, chopped coarsely

Steps:

  • 1. Combine Flour, Baking Soda and Salt in bowl and set aside.
  • 2. Beat Butter, Sugars and Banana Extract until creamy.
  • 3. Add eggs, one at a time, beating well after each addition.
  • 4. Gradually beat in flour mixture until all is added and it is well mixed.
  • 5. Add in White chocolate chips, coconut and pineapple stirring to combine.
  • 6. Drop by rounded tablespoon onto ungreased cookie sheet.
  • 7. Bake at 350 degrees, 10-12 minutes or until golden brown.
  • 8. Cool on baking sheet for 2 minutes and then remove to wire cooling rack to cool completely.

½ cup shortening
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 (8 ounce) can crushed pineapple
2 cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon baking soda
⅛ teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening and sugar until light and fluffy. Add the egg, beat well, then stir in the vanilla and pineapple. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Drop by rounded spoonfuls onto the prepared cookie sheet.

1 (8 ounce) can crushed pineapple, well drained
1 teaspoon vanilla
1 3/4 cups all-purpose flour
1 teaspoon baking powder
2/3 cup chopped macadamia nuts
3/4 cup sweetened coconut

Steps:

  • Heat oven to 350°F.
  • Combine sugar and butter in a large bowl. Beat at medium speed until creamy.
  • Add drained pineapple and vanilla; continue beating until well mixed.
  • Reduce mixer speed to low; add flour and baking powder. Beat until well mixed.
  • By hand, stir in nuts and 1/4 cup of the coconut.
  • Place remaining coconut in a small bowl.

1/2 teaspoon baking soda
3/4 cup dark brown sugar, firmly packed
3/4 cup white sugar
1 cup salted butter, softened
1 large egg
2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple or 1 cup fresh finely chopped pineapple, well drained
1 tablespoon pineapple juice
1/4 cup sweetened flaked coconut (optional)

Steps:

  • Preheat oven to 300 degrees F.
  • In medium bowl, combine flour and baking soda.
  • Mix well with a wire whisk; set aside.
  • In large bowl with an electric mixer blend sugars.
  • Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
  • Add egg, vanilla, crushed pineapple, and pineapple juice and beat on medium speed until smooth.
  • Add the flour mixture and blend at low speed until just combined.
  • Do Not Overmix!

1 cup flaked coconut
1 cup Betty Crocker™ macadamia nuts, chopped
1 can (14 oz) sweetened condensed milk (not evaporated)
