PINEAPPLE-MARINATED CHICKEN BREASTS

Pineapple-Marinated Chicken Breasts image

Bromelain, the group of enzymes in fresh pineapple, is excellent at breaking down the connective tissues in thick, fibrous chicken breasts. In this simple marinade, grated pineapple completely alters the texture of the breast meat, resulting in something that's akin to luscious dark meat. Briefly marinating here is important: Leave it too long and the chicken will fall apart during cooking, becoming shreddy and a little gluey. Fifteen minutes is the sweet spot. The accompanying pineapple salsa is a bright topping for the juicy morsels of aromatic chicken and rice.

Time 30m

Yield 4 servings

Number Of Ingredients 15

3 packed tablespoons dark brown sugar
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon fish sauce
2 tablespoons olive oil, plus more for cooking
1 teaspoon kosher salt (Diamond Crystal)
1 teaspoon garlic powder
1/4 to 1/2 teaspoon ground cayenne
1/2 teaspoon black pepper
1 cup diced fresh pineapple (1/2-inch chunks)
1/4 cup finely diced red onion
2 tablespoons finely chopped fresh cilantro
2 tablespoons finely grated fresh pineapple, including accumulated juices
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch chunks
Cooked white rice, for serving

Steps:

  • In a large bowl, stir together the brown sugar, rice vinegar, soy sauce, fish sauce, 2 tablespoons olive oil, salt, garlic powder, ground cayenne and black pepper. Transfer 1 tablespoon of this marinade mixture to a separate medium bowl and add the diced pineapple, red onion and cilantro. This is your salsa; toss until well mixed and set aside.
  • Add the grated pineapple and its juices to the marinade mixture in the large bowl, then add the chicken and toss to coat. Set aside to marinate at room temperature for 15 minutes (and no longer).
  • Once the chicken is done marinating, heat a large nonstick skillet over medium-high and add enough olive oil to lightly coat the bottom of the pan. Add the chicken pieces, leaving any marinade behind, in a single layer so that they don't touch and let cook until the bottoms are browned, 2 to 3 minutes. Continue cooking, stirring occasionally, until browned on all sides and no longer pink on the inside, 4 to 5 minutes more.
  • Serve the chicken over rice and top with the reserved pineapple salsa.

RED ONION, PORK, AND PINEAPPLE WITH SRIRACHA-PINEAPPLE MARINADE

Red Onion, Pork, and Pineapple with Sriracha-Pineapple Marinade image

Sweet and tart pineapple juice and spicy sriracha become an intoxicating marinade for juicy pieces of pork loin, red onion, and chunks of pineapple on these skewers that have a tropical flair.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 50m

Number Of Ingredients 7

2 cups pineapple juice
1/4 cup vegetable oil, plus more for grill
2 to 4 tablespoons Sriracha sauce
Salt and pepper
1 1/2 pounds pork tenderloin, cut into 1 1/2-inch pieces
2 small red onions, sliced into 3/4â€"inch rings
1 pineapple, cut into 1 1/2-inch pieces

Steps:

  • In a small pot, reduce pineapple juice to 1/2 cup over medium-high, about 20 minutes. Let cool.
  • Combine pineapple juice, oil, Sriracha, and 1 teaspoon salt. Reserve and refrigerate about 1/4 cup of marinade. Transfer remaining marinade to a zip-top bag and add pork and toss to coat. Refrigerate 8 hours (or up to overnight).
  • Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Thread some skewers with pork, others with onion, and others with pineapple. Season with salt and pepper. Grill pineapple skewers for 6 to 9 minutes, pork skewers for 9 to 12 minutes, and onion skewers for 12 to 15 minutes, turning all skewers frequently and brushing with reserved marinade.

Tips:

  • Choose the right pineapple. A ripe pineapple will have a sweet and juicy flavor. Look for a pineapple that is heavy for its size and has a golden yellow color. Avoid pineapples that have green or brown spots.
  • Use a sharp knife to cut the pineapple. This will help to prevent the pineapple from becoming bruised or crushed.
  • Remove the core of the pineapple. The core is the tough, fibrous center of the pineapple. It is not edible and should be removed before cooking.
  • Cut the pineapple into bite-sized pieces. This will help the pineapple to cook evenly.
  • Use a large skillet or Dutch oven to cook the chicken. This will give the chicken plenty of room to brown and cook evenly.
  • Brown the chicken in batches if necessary. If your skillet or Dutch oven is not large enough to cook all of the chicken at once, brown the chicken in batches. Remove the chicken from the skillet or Dutch oven after it has browned and set aside. Once all of the chicken has been browned, return it to the skillet or Dutch oven.
  • Add the pineapple, onion, and garlic to the skillet or Dutch oven. Cook until the vegetables are softened.
  • Add the remaining ingredients to the skillet or Dutch oven. Bring to a boil, then reduce heat and simmer until the chicken is cooked through.
  • Serve the chicken with rice or noodles.

Conclusion:

Pineapple onion smothered chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is tender and juicy, and the pineapple and onion add a sweet and tangy flavor. This dish is sure to be a hit with your family and friends.
