A fun twist on the traditional oatmeal raisin cookie, this is a unique combination that is absolutely delicious. I brought these to a BBQ this weekend and they were gone before I knew it! I don't remember where I got the recipe- I copied it from a magazine at some point.

Time 40m

Yield 6 dozen, 72 serving(s)

Number Of Ingredients 10

1 (20 ounce) can crushed pineapple, undrained
1 cup butter, softened
1 1/2 cups brown sugar, packed
1 egg
3 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup raisins

Steps:

  • Drain pineapple well, reserving 1/2 Cup of juice.
  • In a large mixing bowl, beat butter and sugar until light and fluffy. Beat in egg, crushed pineapple and reserved juice. (Mixture will be very wet).
  • In a medium bowl, combine oats, flour, baking powder, cinnamon, salt, and raisins. Stir into pineapple mixture.
  • Drop by heaping tablespoonfuls onto greased baking sheets. Bake at 300 for 20-25 minutes or until golden. Remove to wire racks to cool. (Unfortunately I didn't copy down the oven temp when I copied the recipe. I played with it a bit and found 300 to work well for me, even though it seems a bit low).

Tips:

  • Use ripe pineapple. The riper the pineapple, the sweeter and more flavorful your cookies will be. If you don't have ripe pineapple, you can use canned pineapple, but be sure to drain it well.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are golden brown. The cookies should be set in the center and the edges should be golden brown.
  • Let the cookies cool completely before serving. The cookies will continue to firm up as they cool.

Conclusion:

These pineapple oatmeal chocolate chip cookies are a delicious and easy-to-make treat. They're perfect for breakfast, lunch, or a snack. The pineapple adds a sweet and tropical flavor, the oatmeal adds a chewy texture, and the chocolate chips add a rich and decadent flavor. These cookies are sure to be a hit with everyone who tries them!
