4 ounces good-quality silver tequila
1 1/2 ounces agave syrup or simple syrup
4 1-inch chunks pineapple, plus wedges for garnish
2 sprigs fresh cilantro
2 1/4-inch-thick slices red chile pepper (with seeds), plus more for garnish
4 ounces pineapple juice
2 ounces lime juice (from about 2 limes)
1 ounce triple sec
Kosher salt, for the glasses (optional)

Steps:

  • Combine the tequila, agave, pineapple, cilantro and chile pepper in a large shaker; muddle with the end of a wooden spoon.

1 oz triple sec
juice from one lime (about 2 tablespoons)

  • 1. Run the rim of a glass with a lime wedge to get some juice on it. Place the salt on a shallow plate and dip the edges into it. Skip to step 3 if making in the blender.
