Time 1h15m

Yield 3 mini loaves, 6-9 serving(s)

Number Of Ingredients 11

1/2 cup water
1 1/2 cups sugar
3 eggs
1 1/4 cups oil
1 3/4 cups flour
1 1/4 cups bananas, over-ripe and mashed
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup macadamia nuts, chopped
1 1/4 cups crushed pineapple, drained

Steps:

  • Mix oil and sugar together thoroughly. Add bananas, eggs and water.
  • Sift dry ingredients and blend into mixture. DO NOT over-mix.
  • Dust macadamia nuts with flour.
  • Fold dusted nuts and pineapple into mixture.
  • Lightly grease and paper line 3 mini loaf pans.
  • Pour batter into loaf pans.
  • Bake at 350 for 1 hour or until firm.

Tips:

  • Use fresh pineapple. Fresh pineapple will give your bread the best flavor. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Toast the macadamia nuts. Toasting the macadamia nuts will bring out their flavor and make them more crunchy.
  • Don't overmix the batter. Overmixing the batter will make the bread tough. Mix just until the ingredients are combined.
  • Bake the bread at a moderate temperature. Baking the bread at a moderate temperature will help it rise evenly and prevent it from overbrowning.
  • Let the bread cool completely before slicing. Letting the bread cool completely will help it set and make it easier to slice.

Conclusion:

Pineapple macadamia nut bread is a delicious and easy-to-make bread that is perfect for breakfast, lunch, or a snack. It is also a great way to use up leftover pineapple. With its moist texture, sweet pineapple flavor, and crunchy macadamia nuts, this bread is sure to be a hit with everyone who tries it.
