This recipe was passed down by my mother. We serve it often, but especially at Christmas and Thanksgiving. Of course, the green color makes it nice for St. Patrick's Day, too. With the marshmallows, pecans and whipped cream, the sweet salad can even be served as a light dessert. I like to cook for both small groups and large crowds. When our entire family gets together for thanks and feasting, it's a wonderful time!

2 cups boiling water, divided
1 package (3 ounces) lime gelatin
16 large marshmallows
3 ounces cream cheese, softened
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup heavy whipping cream, whipped
1 cup chopped pecans
2 to 3 drops green food coloring, optional

Steps:

  • In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

16 oz crushed pineapple (drained and set aside)
1 sm pkg lime jell-o
8 oz package cream cheese
1 1/2 c cold water
1 1/2 c mini marshmallows
1/2 c chopped pecans or walnuts
2 Tbsp pineapple juice drained from pineapple

Steps:

  • 1. Boil 1 cup water. .
  • 2. In a large bowl add lime Jell-O. Pour in boiling water, stirring constantly to dissolve, about 2 minutes
  • 3. Add 1/2 cup cold water and pineapple juice.
  • 4. Blend in cream cheese. Chill until thickened, but not set, about 1 1/2 hours.
  • 5. Fold in pineapple, marshmallows, and nuts.
  • 6. Pour into 1 qt. mold (or a small cake pan) and chill until firm, about 2 hours. (Spray with unflavored Pam spray.)

1 (6 ounce) box lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, juice reserved
2 cups boiling water
1 cup of reserved pineapple juice (you may have a little less)
1/2 cup cold water
8 ounces sour cream

Steps:

  • Drain pineapple and reserve liquid.
  • Spray Jello mold or bowl with PAM cooking spray.
  • Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
  • Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
  • Whisk in about 8 oz. sour cream (mom used a little less).
  • Dump pineapple inches.
  • Chill until set.
  • If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
  • Invert the bowl onto the plate and let the jell-o slide out.

2 cups frozen whipped topping, thawed

cold water
7 maraschino cherry halves
1-1/2 cups boiling water
1 pkg. (8-serving size) JELL-O Lime Flavor Gelatin
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

Steps:

  • Drain pineapple, reserving juice. Add enough cold water to juice to measure 1-1/2 cups; set aside. Arrange 7 pineapple slices in bottom of 9-inch round cake pan sprayed with cooking spray. Place maraschino cherry half, cut-side up, in center of each pineapple slice. Chop remaining pineapple slices; set aside.
  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in measured pineapple juice and water.
