GRANDMA CAROLYN'S PINEAPPLE AND COCONUT KUGEL
My MIL found this recipe in her Mother's handwriting in a recipe file. It isn't very sweet and I will add 1/2 cup sugar next time I make it. I made this for 8 people tonight and while everyone liked it, they all wished it was a bit sweeter. I added some sour cream and some ricotta cheese as well.

Tips:
- Use fresh pineapple for the best flavor. If you're using canned pineapple, be sure to drain it well and pat it dry before using.
- Don't overmix the batter. Overmixing will make the kugel tough.
- Bake the kugel until it's golden brown and a toothpick inserted into the center comes out clean.
- Let the kugel cool slightly before serving. This will help it to hold its shape.
- Serve the kugel with sour cream, applesauce, or whipped cream.
Conclusion:
Pineapple kugel is a delicious and easy-to-make dessert that's perfect for any occasion. It's a great way to use up leftover pineapple, and it's also a fun and festive dish to serve at parties. Whether you're a fan of pineapple or not, you're sure to love this kugel. So what are you waiting for? Give it a try today!
