Pineapple Honey-Glazed Ham image

Ham dressed in pineapple rings and maraschino cherries is a holiday classic, burnished with a glossy glaze made with pineapple juice, honey and brown sugar. If you like sweet and salty, you'll love this show-stopping centerpiece!

Provided by Food Network Kitchen

Time 4h20m

Yield 12 servings

Number Of Ingredients 6

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
  • Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
  • Increase the oven temperature to 425 degrees F.
  • Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

PINEAPPLE GLAZE FOR BAKED HAM

Pineapple Glaze for Baked Ham image

Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

Provided by Lex

Categories     Main Dish Recipes     Pork     Ham     Whole

Time 1h50m

Yield 20

Number Of Ingredients 4

1 (6 pound) fully-cooked, bone-in ham
1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.

  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
  • While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.
  • Pour about half the glaze evenly over the ham and pineapple about 1 hour before the end of baking; pour the rest over the ham about 30 minutes before the end of baking.

Tips:

  • Use fresh pineapple juice for the best flavor. Bottled or canned juice can be used, but the flavor will not be as good.
  • Brown sugar can be substituted for white sugar in the glaze, if desired.
  • Add a teaspoon of ground ginger or cinnamon to the glaze for a more complex flavor.
  • If you don't have a pastry brush, you can use a spoon to spread the glaze on the ham.
  • Be sure to score the ham before baking it. This will help the glaze penetrate the meat and create a more flavorful ham.
  • Cover the ham with foil during the first part of baking to prevent it from drying out.
  • Baste the ham with the glaze every 15-20 minutes during the last part of baking to keep it moist and flavorful.

Conclusion:

Pineapple glaze is a delicious and easy way to add flavor to your holiday ham. With just a few simple ingredients, you can create a glaze that will make your ham the star of the show. Whether you're serving it for a special occasion or just a weeknight dinner, pineapple glaze is sure to please everyone at the table.
