Time 1h

Number Of Ingredients 12

½ cup butter (very soft or melted)
½ cup light brown sugar
1 cup all-purpose flour
2 eggs
1 tablespoon vanilla extract
1 tablespoon fresh lime juice
1/3 cup light brown sugar
¼ cup all-purpose flour
¼ teaspoon kosher salt
1 cup pineapple tidbits in 100% juice (drained)
1 cup shredded sweetened coconut
1 cup shredded sweetened coconut

Steps:

  • Preheat the oven to 350 degrees. Combine the crust ingredients and press the mixture into the bottom of a well-greased or parchment lined 10" square pan. Doubling this recipe will fill a 9x13 pan.
  • Bake for 12 minutes (or 15 minutes for a doubled recipe). Remove from the oven and let the crust cool for 10 minutes while preparing the filling.
  • Place the pineapple and 1 cup of shredded coconut in a bowl. Sprinkle with flour, brown sugar and salt. Stir to coat. Mix together the eggs, vanilla and lime and stir into the pineapple mixture.
  • Pour the filling over the crust and top with the remaining coconut. Bake for 25-27 minutes, until the coconut turns golden brown. Let cool completely before slicing. Enjoy!

Tips:

  • Use ripe pineapple: The riper the pineapple, the sweeter and more flavorful your frozen bars will be.
  • Don't overfill the molds: Leave a little bit of space at the top of each mold so that the mixture has room to expand as it freezes.
  • Freeze the bars for at least 4 hours: This will ensure that they are frozen solid before you enjoy them.
  • Store the bars in a freezer-safe container: This will help to keep them fresh and prevent them from getting freezer burn.
  • Enjoy the bars within 2 weeks: Frozen pineapple bars are best enjoyed within 2 weeks of being made.

Conclusion:

Pineapple frozen bars are a delicious and refreshing treat that are perfect for a hot summer day. They are also a great way to use up leftover pineapple. With just a few simple ingredients and a little bit of time, you can make these delicious frozen treats at home.
