- 1. 1st Layer. Melt 1/2 cup of butter and mix with graham wafer crumbs. Press into 9 1/2 X 12 inch pan. Place in refrigerator or freezer.
- 2. 2nd Layer. Mix together 1/4 cup of soft butter with confectioners sugar and pineapple juice (enough juice to make a soft icing). Spread over 2nd layer (this can be trying), place back in refrigerator.
- 3. 3rd layer. Whip the cream until stiff then fold in the pineapples, spread over 2nd layer. Keep refrigerated, enjoy This is easier to cut when it has been left out for a short time.

- Use ripe pineapple for the best flavor.
- Drain the pineapple well before using to prevent the cake from becoming too watery.
- Use a springform pan to make it easy to remove the cake.
