This is a quick, easy, and authentic Thai curry dish that's sweet and very spicy. I became addicted to the dish at a local restaurant and then worked to duplicate it at home. I think I've got the taste and presentation pegged. I'm guesstimating on the amounts since I don't measure much when I cook. Feel free to adjust to taste.

2 cups uncooked jasmine rice
1 quart water
¼ cup red curry paste
2 (13.5 ounce) cans coconut milk
2 skinless, boneless chicken breast halves - cut into thin strips
3 tablespoons fish sauce
¼ cup white sugar
1 ½ cups sliced bamboo shoots, drained
½ red bell pepper, julienned
½ green bell pepper, julienned
½ small onion, chopped
1 cup pineapple chunks, drained

Steps:

  • Bring rice and water to a boil in a pot. Reduce heat to low, cover, and simmer 25 minutes.
  • In a bowl, whisk together curry paste and 1 can coconut milk. Transfer to a wok, and mix in remaining coconut milk, chicken, fish sauce, sugar, and bamboo shoots. Bring to a boil, and cook 15 minutes, until chicken juices run clear.

2 large egg yolks
2 tablespoons white sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1 pinch salt

½ cup whole milk
¼ cup pineapple juice
2 ¼ teaspoons active dry yeast
1 large egg, beaten
3 tablespoons white sugar
1 teaspoon lemon zest
2 ¾ cups all-purpose flour
½ cup whole wheat flour
½ teaspoon kosher salt
4 tablespoons unsalted butter, softened
cooking spray
1 cup confectioners' sugar
1 ½ tablespoons milk, or as needed

1 1/2 cups sour cream
1/2 cup mayonnaise
2 teaspoons curry powder
1 tablespoon soy sauce
1/4 cup crystallized ginger, chopped finely
1/2 cup raisins, chopped finely
4 scallions, chopped
1 (10 inch) flour tortillas
1 cup imitation bacon bits
1 (7 ounce) can crushed pineapple, drained
4 ounces alfalfa sprouts

Steps:

  • In a medium bowl, with a hand-held mixer, beat together cream cheese, sour cream, mayonnaise, curry powder and soy sauce until smooth.
  • With a spoon, stir in diced ginger, raisins and scallions.
  • On a flat surface, unwrap tortillas. With a spatula, evenly spread one-fourth of the cream cheese mixture over 1 tortilla.

BASE LAYER
1 pkg white bread
FILLING
8 oz cream cheese, room temperature
1 small can crushed pineapple, juice squeezed out
1 large egg yolk
1 tsp sugar
COATING
1-2 stick butter, melted
1 c sugar
1 Tbsp cinnamon

Steps:

  • 1. Prepare bread for filling by cutting off all the crusts and rolling each piece flat with a rolling pin.
  • 2. Combine filling ingredients until smooth. Spread a layer of fillig on 1 side of each bread piece. Roll up jelly roll style.
  • 3. Dip each roll into melted butter and then into cinnamon sugar mixture. Set aside on a pan in a single layer. When all bread is rolled up and sugared, place pan in freezer overnight.
  • 4. The next day when you get ready to bake these preheat the oven to 350. Place the pan, with the rolls still in a single layer, in the oven and bake for 10-15 mintes.

1-1/2 cups warm whole milk (110° to 115°)

1 cup sugar
1 teaspoon salt
2 large eggs, beaten
6 to 6-1/2 cups all-purpose flour
FILLING:
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup orange juice
2 tablespoons grated orange zest
1 can (8 ounces) crushed pineapple, drained
1/3 cup sugar
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon orange juice

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 1-1/3 cups flour; beat until smooth. Stir in enough of the remaining flour to form a soft dough. , Turn onto a floured surface, knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top.
