Glazed Cranberry-Pineapple Ham image

I was in a creative mood so I took a can of crushed pineapple and a can of cranberries and came up with this glaze. It looks weird when cooked but got rave reviews when I made it Christmas Eve.

Time 1h30m

Number Of Ingredients 5

1 picnic ham with bone
1 can(s) crushed pineapple
1 can(s) whole cranberries
3 Tbsp hellman's dijon-mayonnaise
1/4 c brown sugar

Steps:

  • 1. Preheat oven to 350F. Place ham in a roasting pan. Heat rest of ingredients and bring to a boil and then simmer for 10-15 minutes.
  • 2. Make criss-cross slits in ham with a knife. Pour half the glaze over top. Place in oven and bake 30 minutes and then reapply glaze on ham. Cook for another 30 minutes repeat step. Remove ham and place foil over it. Return to a 250F oven for 35 minutes.
  • 3. Remove glaze from bottom of pan and serve over ham slices. ***the glaze has a purple tint due to the combination of cranberries and pineapple, but the taste is amazing.

Tips:

  • For the best flavor, use fresh pineapple and cranberries. If using canned pineapple, be sure to drain it well.
  • To make the glaze, use a good quality pineapple jam. You can also use apricot or orange marmalade.
  • If you don't have a meat thermometer, you can test the ham for doneness by inserting a knife into the thickest part of the ham. If the juices run clear, the ham is done.
  • Let the ham rest for at least 15 minutes before carving. This will allow the juices to redistribute throughout the ham, making it more tender and flavorful.

Conclusion:

Pineapple Cranberry Ham is a delicious and easy-to-make holiday dish. The combination of sweet pineapple, tart cranberries, and savory ham is sure to please everyone at your table. This recipe is also relatively affordable and can be made ahead of time, making it a great option for busy families.
