PINEAPPLE UPSIDE DOWN CORNBREAD MUFFINS

Pineapple Upside Down Cornbread Muffins image

Provided by Aarti Sequeira

Time 1h

Yield 12 muffins

Number Of Ingredients 17

Nonstick cooking spray, for the muffin pan
3 tablespoons dark brown sugar
2 tablespoons unsalted butter
1/4 teaspoon ground allspice
1/4 teaspoon kosher salt
1/8 teaspoon ground cinnamon
2 cups fresh pineapple, cut into 1/2-inch pieces
1/2 cup boiling water
1/2 cup fine yellow cornmeal
3/4 cup buttermilk
1 large egg, lightly beaten
1/2 cup all-purpose flour
2 teaspoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
Flaky sea salt, for garnish

Steps:

  • For the pineapple: Preheat the oven to 450 degrees F. Grease a 12-cup muffin pan with cooking spray.
  • Combine the brown sugar, butter, allspice, kosher salt and cinnamon in a skillet over medium-low heat and cook until bubbling. Add the pineapple, stir to coat and cook until the liquid has nearly evaporated and the caramel has deepened in color, about 7 minutes.
  • For the muffins: Meanwhile, working quickly, whisk the boiling water into the cornmeal in a large bowl until you get a stiff mash. Whisk in the buttermilk, stirring until smooth. Stir in the egg, then add the flour, granulated sugar, baking powder, kosher salt and baking soda and mix until just incorporated.
  • Add 2 to 3 pieces of the pineapple to the bottom of each muffin cup. Evenly divide the cornbread mixture among the muffin cups, filling each three-quarters of the way full.
  • Bake for 15 minutes. Cool on a wire rack for 5 minutes. Use a paring knife to remove each muffin, flipping it to reveal the caramelized pineapple before placing on a plate. Sprinkle with flaky sea salt and serve!

PINEAPPLE STUFFING

Pineapple Stuffing image

This nostalgic stuffing is almost like dessert that can be enjoyed during the meal (and after if you want). We've added a little vanilla here since it pairs well with the pineapple and is especially great with ham, balancing the sweet with the savory.

PINEAPPLE DRESSING

Pineapple Dressing image

I got this recipe from my grandmother. She goofed up a recipe for baked pineapple and actually came up with a better dish, or we think so. Easy to make. You can assemble the day before and bake when ready.

Time 40m

Yield 1 pan, 6 serving(s)

Number Of Ingredients 5

1 (20 ounce) can crushed pineapple, drained
1 egg
1 cup sugar
1/2 cup butter, melted
6 -10 slices white bread

Steps:

  • In a bowl, combine drained pineapple, egg, sugar, butter.
  • Begin adding bread pieces and stir. Bread should absorb liquid. Continue adding bread until bread will no longer absorb liquid. This can be anywhere from 6-10 slices.
  • Put in a 9x9" baking dish.
  • Bake 350 for 30-45 minutes. Top should begin to brown when it is done.
  • I almost always double the recipe, use a 9 x 13 pan, and bake for 1 hour.

The sweetness of the bread offsets the tanginess of the cheese, and the pineapple in this recipe.Source: Unknown

Provided by Lynnda Cloutier

Categories     Savory Breads

Number Of Ingredients 10

1 cup flour
1 cup cornmeal
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter, softened
four eggs, lightly beaten
one can cream style corn, 15 ounces
one can crushed pineapple, juice pack, drained, 8 ounces
4 ounces cheddar cheese or monterey jack cheese, shredded, 1 cup

Steps:

  • 1. preheat oven to 375°. Grease and flour a 2 quart rectangle or other baking dish. Set aside. In a medium bowl, mix flour, cornmeal, sugar, baking powder, and salt. Set aside.
  • 2. In a large mixing bowl beat butter with mixer on medium speed for 30 seconds. Add eggs, one at a time. Beat well after each addition. Beat in flour mixture on low speed just until mixed. Stir in corn, pineapple, and cheese. Spoon batter into prepared dish.
  • 3. Bake about 35 minutes or until toothpick inserted near center comes out clean. Cut into squares. Serve warm. Makes 12 servings.

Tips:

  • Use fresh, sweet pineapple. Canned pineapple can be used in a pinch, but fresh pineapple will give your dressing a much better flavor.
  • Don't overcook the cornbread. The cornbread should be just slightly firm in the center. If you overcook it, it will be dry and crumbly.
  • Use a variety of herbs and spices. This will give your dressing a complex and flavorful taste. Some good options include sage, thyme, rosemary, and black pepper.
  • Don't be afraid to experiment. There are many different ways to make pineapple cornbread dressing. Feel free to add your own personal touches to the recipe.

Conclusion:

Pineapple cornbread dressing is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover cornbread and pineapple. The dressing can be made ahead of time, which makes it a convenient option for busy weeknights. Whether you are serving it for Thanksgiving dinner or a casual potluck, pineapple cornbread dressing is sure to be a hit.
