1/2 cup soft butter
1 1/2 cups granulated sugar
4 eggs
1 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 cup crushed pineapple, drained
1/2 cup chopped walnuts
1/2 cup coconut
2 cups confectioners' sugar
rum
1/2 cup melted chocolate chips

Steps:

  • Cream butter with sugar.
  • Blend in eggs. Beat well.
  • Add flour, sifted with salt and baking soda.
  • Fold in pineapple, nuts, and coconut.
  • Spread on greased 10" x 15" x 1" baking pan.
  • Bake at 350 degrees F. for 25 to 30 minutes.

1 package (16 ounces) angel food cake mix
2 cans (8 ounces each) crushed pineapple, undrained
1 teaspoon coconut extract
1 package (8 ounces) reduced-fat cream cheese
2 tablespoons confectioners' sugar
1 teaspoon pineapple or orange extract
1-1/2 cups reduced-fat whipped topping
1/4 cup sweetened shredded coconut, toasted

Steps:

  • In a large bowl, combine the cake mix, pineapple and coconut extract. Beat on low speed for 30 seconds; beat on medium for 2 minutes. , Gently spoon into an ungreased 10-in. tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest oven rack at 350° for 35-40 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour. , Run a knife around side and center tube of pan. Remove cake to a serving plate. For topping, in a large bowl, beat the cream cheese, confectioners' sugar and pineapple extract until smooth. Fold in whipped topping. Frost top and sides of cake. Sprinkle with coconut.

This buttery Bundt cake, made with coconut milk, coconut flakes, and fresh chopped pineapple swirled right into the batter, is easier to make and just as satisfying. A pineapple glaze adds a tart punch to the mix.

1 cup unsalted butter, at room temperature, plus more for greasing
3 cups all-purpose flour, plus more for dusting
3 cups (packed) sweetened flaked coconut (about 10 1/2 ounces)
1 cup chopped fresh pineapple
1 cup walnuts, coarsely chopped
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 cups sugar
6 large eggs
2 teaspoons pure vanilla extract
2 tablespoons crème de cacao
1 cup plus 2 tablespoons unsweetened coconut milk (not low-fat)
1 3/4 cups confectioners' sugar
2 to 3 tablespoons pineapple juice

  • Preheat the oven to 350°F. Generously butter a 3-quart Bundt pan; dust the pan with flour, shaking out any excess.

  • To make the glaze, whisk the confectioners' sugar, pine-apple juice, and remaining 2 tablespoons coconut milk in a medium bowl to blend. Spoon the glaze over the cooled cake, then garnish with toasted flaked coconut. Allow the glaze to set for at least 15 minutes before serving.

1 box Duncan Hines pineapple cake mix
1 box Jell-o instant coconut cream pudding mix (small; 3.4 oz)
4 large eggs
1/2 can(s) crushed pineapple, drained reserving 1/2 cup juice (20 oz can)
1/2 c pineapple juice
1/2 can(s) cream of coconut (2/3 cup)
1/2 c Jamaican rum
1/2 c vegetable oil
PINEAPPLE-RUM GLAZE
1 stick butter
1/4 c water
1 c brown sugar
1/2 can(s) crushed pineapple, drained (remaining from cake)
3/4 c Jamaican rum

Steps:

  • 1. CAKE: Preheat oven to 325. Grease and flour a large 12" Bundt or tube pan (or spray well with Bakers' Joy).
  • 2. Mix all cake ingredients together at low speed for 30 sec, then at medium speed for 2 min.
  • 3. Pour batter into prepared pan.
  • 4. Bake for 1 hour or until toothpick comes out clean when inserted in center. Cool in pan until cake is completely cool. Make glaze while cake is cooling.
  • 5. RUM GLAZE: Melt butter in a saucepan.
  • 6. Stir in water and sugar. Boil 5 minutes stirring constantly.
  • 7. Add pineapple and boil 1 more minute while stirring.
  • 8. Remove from heat and add rum; set aside and cool 10 minutes.
  • 9. Poke holes all over the bottom of the cooled cake (I use a chopstick). Spoon glaze over cake bottom a little at a time so it soaks in until all glaze is used. Let cake sit for at least 30 minutes and then transfer to serving plate. The longer it sits, the better it gets!
