PINEAPPLE MUFFINS WITH COCONUT AND BROWN SUGAR TOPPING
I was in the mood for pineapple and wanted to make some muffins and found few such combinations on this site. I did a quick search and found this on About.com, under the heading Southern U.S. Cuisine, from Diana Rattray. I really liked these, they are flavorful and not overly sweet. I thought they might need a little something and I added some allspice, cinnamon and nutmeg to the topping.

MAKE-AHEAD COCONUT-PINEAPPLE MUFFINS
I make and refrigerate the batter for these not-so-sweet muffins the night before. The next morning, I bake them and they are ready for breakfast or for a quick snack. I sometimes dip them in a brown sugar glaze to sweeten them up a bit.

Tips:
- Ensure Fresh Ingredients: Use fresh pineapple, unsweetened coconut flakes, and plump raisins for optimal flavor and texture.
- Sugar Adjustment: Depending on your desired sweetness level, you may adjust the amount of white sugar. Start with the recommended quantity and adjust to your preference.
- Muffin Pan Preparation: Grease your muffin pan thoroughly to prevent muffins from sticking. Alternatively, you can use muffin liners for easy removal.
- Baking Temperature: Be mindful of your oven's temperature accuracy. If it tends to run hot or cold, adjust the baking temperature accordingly.
- Muffin Dome: To achieve those tempting muffin domes, ensure your oven is preheated to the correct temperature before baking.
- Toothpick Test: Insert a toothpick into the center of a muffin. If it comes out clean, the muffins are done baking. Avoid overbaking to prevent dryness.
- Muffin Cooling: Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack. This helps them set and retain their shape.
