1 teaspoon pepper
1 teaspoon salt
2 teaspoons sesame oil, divided
¼ cup chicken broth
1 tablespoon soy sauce
1 tablespoon hoisin sauce
1 teaspoon cornstarch
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tablespoon minced fresh ginger

½ cup carrot, sliced
½ cup sugar snap peas, halved
4 servings cooked egg noodles
1 tablespoon scallions, chopped, for garnish

Steps:

  • In a medium bowl, season the chicken with pepper, salt and 1 tablespoon of sesame oil. Mix thoroughly and set aside.
  • In a separate medium bowl, combine the chicken broth, remaining tablespoon of sesame oil, soy sauce, hoisin sauce, and cornstarch. Mix thoroughly and set aside.
  • Heat the vegetable oil in a wok or large pan over medium-high heat. Add the chicken and cook until no longer pink inside, 3-4 minutes. Remove the chicken from the pan and set aside.
  • Add the garlic and ginger to the pan and cook until fragrant.
  • Add the mushrooms, onions, carrots, and sugar snap peas. Stir fry until the vegetables are tender.
  • Return the cooked chicken to the pan and add the cooked egg noodles and reserved sauce. Cook for 3 minutes, until everything is well-coated in the sauce.
  • Serve garnished with scallions.
  • Enjoy!

Tips:

  • Choose the Right Noodles: Use thin noodles like spaghetti or angel hair pasta for a classic lo mein texture. You can also use thicker noodles like udon or ramen for a chewier bite.
  • Cook the Noodles Properly: Make sure to cook the noodles according to the package instructions. Overcooked noodles will become mushy and ruin the dish.
  • Use Fresh Vegetables: Fresh vegetables will give your lo mein a vibrant flavor and color. Choose vegetables that are in season and at their peak freshness.
  • Don't Overcook the Vegetables: Vegetables should be cooked until they are tender but still have a slight crunch. Overcooked vegetables will become mushy and lose their flavor.
  • Use a Good Quality Sauce: The sauce is what makes lo mein so delicious. Use a sauce that is flavorful and well-balanced. You can make your own sauce or use a store-bought sauce.
  • Add Protein: Protein is a great way to make your lo mein more filling and satisfying. You can add chicken, shrimp, beef, or tofu to your lo mein.
  • Garnish with Fresh Herbs: Fresh herbs like cilantro, scallions, and basil add a pop of flavor and color to your lo mein. Add them just before serving for the best flavor.

Conclusion:

Pineapple chicken lo mein is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. With its sweet and savory sauce, tender chicken, and fresh vegetables, this dish is sure to be a hit with the whole family. So next time you're looking for a quick and easy meal, give pineapple chicken lo mein a try. You won't be disappointed!
