BAKED PINEAPPLE CHICKEN

Baked Pineapple Chicken image

Although there are many "pineapple chicken" recipes on 'zaar, I came up with another version that I "tweaked" to our liking. This recipe has minimal prep, but requires time to marinate in the refrigerator. The amount of garlic and the sweet red chili sauce give this dish it's zing. Easy to prepare. *Note* "prep time" does not include marinade time.

Tips:

  • For the best flavor, use fresh pineapple instead of canned pineapple. Fresh pineapple is sweeter and more juicy, and it will give your dish a brighter flavor.
  • If you don't have a pineapple corer, you can use a sharp knife to cut the pineapple into chunks. Just be careful not to cut yourself!
  • If you're using canned pineapple, be sure to drain it well before adding it to the dish. You don't want your dish to be watery.
  • You can use any type of chicken for this dish, but boneless, skinless chicken breasts or thighs are the easiest to work with.
  • Be sure to cook the chicken all the way through before serving. You can check to see if the chicken is cooked by inserting a meat thermometer into the thickest part of the chicken. The chicken is cooked when the internal temperature reaches 165 degrees Fahrenheit.
  • This dish can be served with a variety of sides, such as rice, noodles, or vegetables.

Conclusion:

Pineapple chicken bake is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great dish to make ahead of time and reheat for lunch or dinner. With its sweet and savory flavor, pineapple chicken bake is sure to be a hit with your family and friends.
