PINEAPPLE ALMOND CHEESE SPREAD
This cheese spread sounds really delicious -- you can serve with crackers or it can be used for a stuffing in celery - YUM! Recipe is from my Kenny Roger's cookbook. Note: I prefer less bell pepper - I reduced it to 1/4 cup (or you can eliminate it all together if you prefer).

Steps:
- Beat together cream cheese, cheddar cheese, mayonnaise, and soy sauce until smooth. Stir in pineapple, almonds, bell pepper and green onion or chives.
- Use to stuff celery stalks or heap in a bowl surrounded by assorted crackers, with a knife for spreading. Serve at room temperature.
Tips:
- Choose ripe pineapple for a sweeter spread. Fresh or canned pineapple can be used, but if using canned, be sure to drain it well.
- Use a sharp knife to cut the pineapple. This will help to prevent the pineapple from becoming mushy.
- If you don't have a food processor, you can grate the pineapple and cheddar cheese by hand. Just be sure to grate them finely.
- Be careful not to overmix the spread. Overmixing can make the spread too runny.
- Taste the spread before serving and adjust the seasonings as needed.
Conclusion:
Pineapple cheddar spread is a delicious and versatile appetizer or snack. It can be served on crackers, bread, or fruit. It's also a great addition to sandwiches and wraps. The combination of sweet pineapple and sharp cheddar cheese is sure to please everyone. So next time you're looking for a quick and easy appetizer, give pineapple cheddar spread a try.
