CARIBBEAN PINEAPPLE PIE

Caribbean Pineapple Pie image

Move over, traditional apple pie. This zesty pineapple pie is a refreshing taste of the Islands that's apple-pie easy.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 6h35m

Yield 8

Number Of Ingredients 13

6 cups cut-up pineapple (2 medium)
1 cup sugar
2 tablespoons rum
2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 6 tablespoons cold water
1/2 cup sugar
1/2 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 tablespoon butter or margarine
1 package (8 oz) cream cheese, softened

Steps:

  • In large glass or plastic bowl, stir pineapple, 1 cup sugar and the rum until mixed. Cover and refrigerate at least 4 hours.
  • In medium bowl, mix 2 cups flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide in half; shape into 2 flattened rounds on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. With floured rolling pin, roll 1 pastry round into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
  • Drain pineapple, reserving juice. Spoon pineapple into pastry-lined pie plate. In 1-quart saucepan, mix 1/2 cup sugar, 1/2 cup flour, the cinnamon and nutmeg. Stir in 1/2 cup of the reserved juice (reserve remaining juice). Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in butter. Pour over pineapple. Trim overhanging edge of pastry 1 inch from rim of pie plate.
  • Roll other round of pastry into 10-inch round. Cut round into 1/2-inch strips. Place 6 strips across filling. To make lattice top, weave a cross-strip through center by first folding back every other strip going the other way. Continue weaving lattice, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends of strips. Fold trimmed edge of bottom crust over ends of strips, building up a high edge; seal and flute. Cover edge with 3-inch strip of foil to prevent excessive browning during baking.
  • Bake 35 to 45 minutes or until crust is brown and filling is bubbly, removing foil for last 15 minutes of baking.
  • In medium bowl, beat cream cheese with electric mixer on medium speed, gradually adding 1/4 cup plus 2 tablespoons reserved pineapple juice until smooth and creamy. Serve with pie.

PINEAPPLE CAKE

Time 45m

Yield 1 pineapple cake (with leftover batter)

Number Of Ingredients 7

1 pineapple
One 15.25-ounce box vanilla cake mix
3 large eggs
1/2 cup vegetable oil
1 tablespoon brown sugar, plus more for serving
1/2 cup maraschino cherries, chopped
Whipped topping, for serving

Steps:

  • Carefully cut off the top of the pineapple and set it aside. With a large spoon, scoop out the core and flesh from the pineapple and the top crown. Discard the core, cut up the flesh into chunks and reserve with the juice. Dry out the hollow pineapple the best you can with a paper towel.
  • In a large bowl, mix the cake mix, eggs, vegetable oil, 1 cup of the pineapple juice and 3/4 cup of the pineapple chunks. Pour the cake batter into the hollowed-out pineapple to fill it three-quarters of the way to the top. Reserve the leftover batter for another use (perhaps a second pineapple? Or cupcakes?!). Microwave on high until the cake is baked, about 10 minutes. A skewer should come out clean. Remove from the microwave with a kitchen towel because it's super hot on the outside, let cool for 15 minutes.
  • While the pineapple is cooling, make the topping: In a small bowl, combine the remaining pineapple chunks (you should have about 1/2 cup) and the brown sugar and microwave on high for 1.5 to 2 minutes. Mix well with a spoon and let cool slightly.
  • Top the pineapple cake with the sugared pineapple, some whipped topping and chopped maraschino cherries. Sprinkle with a bit of brown sugar for the crunch and because it looks pretty. Serve with the pineapple crown on top. Find a long spoon and dig in!

Tips:

  • Use fresh pineapple. Fresh pineapple has the best flavor and texture for pineapple cake.
  • Grate the pineapple finely. This will help the pineapple distribute evenly throughout the cake.
  • Cream the butter and sugar together until light and fluffy. This will help the cake have a tender crumb.
  • Add the eggs one at a time, beating well after each addition. This will help the cake emulsify properly.
  • Fold in the dry ingredients gradually. This will help prevent the cake from becoming tough.
  • Bake the cake at a moderate temperature. This will help the cake rise evenly and prevent it from becoming dry.
  • Let the cake cool completely before frosting. This will help the frosting set properly.
  • Use a cream cheese frosting. Cream cheese frosting is a classic pairing for pineapple cake.
  • Garnish the cake with pineapple slices or chunks. This will add a festive touch to your cake.

Conclusion:

Pineapple cake is a delicious and versatile cake that can be enjoyed for any occasion. With its moist crumb, tangy flavor, and creamy frosting, pineapple cake is sure to be a hit with everyone who tries it. So next time you're looking for a special cake to make, be sure to give pineapple cake a try.
