Tips:

  • Choose the Right Chicken Quarters: Select chicken quarters that are evenly sized and have a good amount of meat on them. This will ensure that they cook evenly and have a juicy texture.
  • Prepare the Marinade: The marinade is key to infusing flavor into the chicken. Make sure to mix all the ingredients thoroughly and let the chicken marinate for at least 30 minutes, or up to overnight. This will allow the flavors to penetrate the meat.
  • Preheat the Grill: Preheat the grill to a medium-high temperature before cooking the chicken. This will help to sear the chicken and lock in the juices.
  • Baste the Chicken: Baste the chicken with the reserved marinade while it is cooking. This will help to keep the chicken moist and add extra flavor.
  • Cook the Chicken Thoroughly: Make sure to cook the chicken until it is cooked through. The internal temperature should reach 165°F (74°C) as measured by a meat thermometer.

Conclusion:

Pineapple BBQ chicken quarters are a delicious and easy-to-make meal that is perfect for any occasion. The chicken is juicy and flavorful, and the pineapple BBQ sauce adds a sweet and tangy touch. Serve the chicken with your favorite sides, such as rice, potatoes, or vegetables, for a complete meal.
