SIMPLE PINEAPPLE MUFFINS

Simple Pineapple Muffins image

Buttered muffins for breakfast, yum. BE SURE TO USE THE KIND OF PINEAPPLE THAT COMES IN HEAVY SYRUP!

Provided by echo echo

Categories     Quick Breads

Time 35m

Yield 12 muffins

Number Of Ingredients 7

1/4 cup butter
2 tablespoons sugar
1 large egg
2 cups flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 (8 ounce) can crushed pineapple, NOT drained

Steps:

  • Cream butter with sugar.
  • Beat in egg.
  • Stir in flour through pineapple just enough to moisten.
  • Pour batter into greased muffin tins.
  • Bake at 350°F about 30 minutes or until toothpick inserted in center comes out clean.
  • Serve with whipped butter.

Tips:

  • For a sweeter muffin melt, use a sweeter variety of pineapple, such as golden pineapple.
  • For a tangier muffin melt, use a tarter variety of pineapple, such as Queen Victoria pineapple.
  • Be sure to use fresh pineapple for the best flavor. Canned pineapple can be used in a pinch, but it will not be as flavorful.
  • If you don't have any muffin mix on hand, you can make your own using a simple recipe. There are many recipes available online.
  • Be careful not to overfill the muffin cups, or the muffin melts will overflow. Fill each cup no more than 2/3 full.
  • Bake the muffin melts until they are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the muffin melts to cool slightly before serving. They will be very hot when they first come out of the oven.

Conclusion:

Pineapple and cheese muffin melts are a delicious and easy-to-make snack or breakfast treat. They are perfect for a party or potluck, or for a quick and easy meal on the go. With a few simple ingredients, you can create a tasty and satisfying treat that everyone will love.
