I've been making this dish for years - it's different from typical rice pilaf dishes in that the cranberries add the sweetness and the tartness that you don't expect in a savory dish. Oh, and it's super hard to fumble.

Tips:
- Use high-quality ingredients. This will make a big difference in the flavor of your pilaf. Look for fresh, plump cranberries, and use a good-quality olive oil.
- Toast the rice before cooking it. This will help to give it a nutty flavor and prevent it from sticking together.
- Use a flavorful broth. Chicken or vegetable broth are both good options. You can also add a little white wine or lemon juice to the broth for extra flavor.
- Don't overcook the rice. Rice pilaf is best when it is cooked al dente, with a slight bite to it.
- Fluff the rice with a fork before serving. This will help to separate the grains and make the pilaf light and fluffy.
Conclusion:
Pine nut and cranberry rice pilaf is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover rice, and it can also be made ahead of time and reheated. This pilaf is also a good source of fiber, protein, and antioxidants.
