Time 25m

Yield 12 skewers

Number Of Ingredients 10

1 1/2 lbs pork tenderloin or 1 1/2 lbs lamb tenderloins, cut in 1/2 inch slices
salt and pepper, to taste
2 teaspoons cumin seeds, lightly toasted and ground
2 teaspoons coriander seeds, lightly toasted and ground
1/2 teaspoon spanish paprika (sweet or hot)
1/2 teaspoon dried oregano
2 garlic cloves
2 tablespoons olive oil
lemon wedge
12 bamboo skewers, soaked in water

Steps:

  • Thread the meat onto 12 bamboo skewers. Season lightly on both sides with salt and pepper.
  • Combine the cumin, coriander, pimenton and oregano. Smash the garlic cloves to a paste with a little salt, mix in the olive oil and combine with the dry spices.
  • Rub the seasoning mixture onto the meat with your fingers. Place on plate, plastic wrap and refrigerate until ready to cook, up to several hours.
  • Place a large cast-iron skillet or griddle over medium-high heat until nearly smoking. Cook the skewers about 3 minutes on each side until nicely browned. Serve hot with lemon wedges.

Tips:

  • Choose the right meat: Traditionally, pinchos morunos are made with pork loin, but you can also use chicken, lamb, or beef. Make sure the meat is cut into 1-inch cubes.
  • Marinate the meat: The marinade is what gives pinchos morunos their distinctive flavor. You can use a variety of different marinades, but the most common ingredients include olive oil, garlic, paprika, cumin, oregano, and salt. Marinate the meat for at least 30 minutes, or up to overnight.
  • Skewer the meat: Once the meat is marinated, thread it onto skewers. Make sure the meat is tightly packed on the skewers, but not so tightly that it's difficult to cook.
  • Cook the pinchos morunos: Pinchos morunos can be cooked over a grill, in a skillet, or in the oven. If you're cooking them over a grill, cook them over medium-high heat for about 10 minutes per side, or until the meat is cooked through. If you're cooking them in a skillet, heat a little olive oil over medium heat and cook the pinchos morunos for about 5 minutes per side, or until the meat is cooked through. If you're cooking them in the oven, preheat the oven to 400 degrees Fahrenheit and cook the pinchos morunos for about 15 minutes, or until the meat is cooked through.
  • Serve the pinchos morunos: Pinchos morunos can be served with a variety of different sides, such as rice, potatoes, or salad. They can also be served with a dipping sauce, such as aioli or tzatziki.

Conclusion:

Pinchos morunos are a delicious and easy-to-make dish that is perfect for any occasion. They are a great way to use up leftover meat, and they can be customized to your own taste. So next time you're looking for a quick and easy meal, give pinchos morunos a try!
