2-1/4 cups unsweetened pineapple juice
1 can (15 ounces) cream of coconut
1-1/2 cups light rum
6 cups crushed ice
Pineapple wedges

Steps:

  • In a 2-qt. pitcher, combine pineapple juice, cream of coconut and rum. Refrigerate, covered, until chilled. For each serving, add a generous cup of rum mixture and 1 cup ice to a blender. Process, covered, until smooth. Pour into a chilled hurricane or highball glass. Cut a 1-in. slit into tip of a pineapple wedge; slide wedge over rim of glass.

1 (8 ounce) can crushed pineapple, undrained
1 cup vanilla ice cream
1/3 cup flaked coconut
1/4 cup light rum or 1/4 cup vodka
3 cups crushed ice
additional flaked coconut

  • Combine cream of coconut, pineapple, ice cream, coconut, and rum in an blender. Process until smooth.

1 can(s) (large can) pineapple juice
1 can(s) 12-16 oz coconut milk (has thick paste and water inside) in chinese food section at grosery store
ice
1 bottle coconut rum or any rum or flavoring

Steps:

  • 1. Pour pineapple juice and coconut milk together. include the thick part as well into a 2 qt pitcher. mix and chill
  • 2. when ready to serve remix and pour in a blender, 1/2 full of mix and add ice to make 3/4's full and blend at high speed until thick and frosty. Add alcohol or not at this stage and serve.

Tips:

  • For a classic piña colada, use light rum, cream of coconut, and unsweetened pineapple juice. If you want a sweeter drink, you can use sweetened pineapple juice, or add a splash of simple syrup.
