INSTANT POT PINA COLADA RICE PUDDING

Instant Pot Pina Colada Rice Pudding image

This recipe came with my Instant Pot and the whole family enjoyed it. I'm one that loves rice pudding but not the raisins that many put in it. This has the flavors of coconut with chunks of pineapple and the ease of using the Instant Pot. TIP: Aborio rice maintains firmness and creaminess when making rice pudding. For optimal results, do not substitute with white rice.

PINA COLADA RICE PUDDING

Yield 4

Number Of Ingredients 13

1 cup basmati rice
3 cups whole milk
1 can coconut milk
1/3 cup sugar
1/4 teaspoon cardamom
Dash fresh grated nutmeg
3 tablespoons sweetened coconut flakes
2 to 3 tablespoons dried sweet pineapple diced
pineapple chunk,
orange supreme,
maraschino cherry for garnish on a paper cocktail umbrella
optional 2 coconuts split in half for serving bowls.
use sugar or salt to keep them upright on your plate

Steps:

  • Wash the rice thoroughly and put in a deep pot. Add milk, coconut milk, and pineapple. Bring to a gentle boil. Lower the heat and simmer for about 1 hour or until the rice is thoroughly cooked and the milk has thickened to a pudding consistency. Add sugar, cardamom, nutmeg and coconut. Mix well. Distribute the pudding into 4 serving dishes. Garnish. Serve warm or chilled (best when warm!)

Tips:

  • Use high-quality ingredients. This will make a big difference in the flavor of your rice pudding. Look for fresh pineapple, creamy coconut milk, and flavorful rice.
  • Don't overcook the rice. Rice pudding is best when the rice is still slightly al dente. Overcooked rice will be mushy and unpleasant.
  • Let the rice pudding cool completely before serving. This will allow the flavors to meld and the pudding to thicken.
  • Garnish the rice pudding with fresh pineapple, toasted coconut, or whipped cream. This will add a pop of flavor and color to your dessert.

Conclusion:

Pina colada rice pudding is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. Whether you are looking for a simple dessert to serve at a party or a special treat to enjoy on a weeknight, pina colada rice pudding is sure to please.
