1 cup sugar
1 cup packed brown sugar
1/2 teaspoon vanilla extract
2 large eggs, room temperature
1 cup chopped pecans
4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons baking powder
1 can (8 ounces) crushed pineapple, undrained
1/2 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugars until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Beat in pineapple. 1/2 cup pineapple juice

1 (18 1/4 ounce) package yellow cake mix
1 cup sweetened flaked coconut
