PINA COLADA CHERRY LITE ICE CREAM
A refreshing dessert using light ingredients. It isn't as "creamy" as ice cream using heavy cream, but the flavor is good and it is only 3 WW points as written and only 2 WW points if using 1 cup half and half and 1 cup low-fat milk.

I enjoy making my own ice cream once in a while using my ice cream machine. The beauty of this homemade recipe is it's all natural ingredients with no preservatives which are usually found in store bought ice cream. I came up with this sweet treat using fresh pineaple and coconut milk. Sweet and refreshing taste of the south!

Jimmy Buffett's sister, Lulu, owns a very popular restaurant in Gulf Shores, Alabama. Lulu's serves the ABSOLUTE best Pina Colada in the world there! Here is the next best thing to one of hers! If you can't find the frozen mixer, 1/2 can coconut cream and enough pineapple juice to create a simulated 'can's worth' will work.

CREAMY PINA COLADA PIE
This is a family favorite and super easy to make. Some like the consistency of this pina colada pie right out of the freezer and others prefer a softer pie-either way it's delicious! -Jenny Hales, Arcadia, Oklahoma

Tips:
- Use frozen pineapple and coconut milk. This will give your ice cream a creamier texture and help it to freeze more quickly.
- If you don't have any maraschino cherries, you can use fresh cherries instead. Just be sure to pit them first.
- You can also add other ingredients to your ice cream, such as chopped nuts, chocolate chips, or fruit. Just be sure to not add too much, or else your ice cream will become too thick.
- Be sure to churn your ice cream for at least 20 minutes. This will help it to become smooth and creamy.
- If you don't have an ice cream maker, you can still make this recipe. Just pour the ice cream mixture into a freezer-safe container and freeze it for at least 4 hours, stirring it every 30 minutes.
Conclusion:
This pina colada cherry lite ice cream is a delicious and refreshing treat that is perfect for any summer occasion. It is easy to make and can be customized to your liking. So next time you are looking for a sweet and creamy treat, give this recipe a try!
