ODIE'S PIMENTO CHEESE SPREAD

Odie's Pimento Cheese Spread image

When I was growing up, we used to visit my Grandparents, Odie and Grandpa, every summer in Bristol, VA. She made this wonderful pimento cheese spread. In those days before food processors, she used a meat grinder. Which is how I'm posting this recipe. I process this the same way using my Kitchenaid w/ attachments or sometimes I just give the cheese and pimentos a few zaps in the processor. This makes lovely tea sandwiches using whole wheat or white bread with the crusts removed and cut in quarters. This also freezes well.

MOM'S PIMENTO CHEESE SPREAD

Mom's Pimento Cheese Spread image

Mom has made this since I was a little girl. Dad loved pimento cheese, but back then it came in little, bitty jars. We couldn't afford it as we were a family of four living on $90 a month. Mom experimented until she came up with a pimento cheese spread. We're on the fifth generation and it is still a favorite. Mom is still...

Provided by Patricia J.

Categories     Sandwiches

Number Of Ingredients 5

2 lb. box velveeta cheese (original), diced into 1-inch pieces
2 4-oz. jar(s) diced pimentos
1/2 c sugar
5 Tbsp cider vinegar
1/2 c miracle whip (do not substitute)

Steps:

  • 1. Put all of the above, except the pimentos, in the large bowl of your mixmaster (I used my food processor).
  • 2. When you start this begin on the slow speed until all ingredients are mixed.
  • 3. Slowly increase speed and then beat on high until the mixture is smooth. If using a food processor, blend for 1-1 1/2 minutes then check to see if smooth.
  • 4. Drain juice off of one jar of diced pimentos.
  • 5. Add pimentos and remaining juice. Mix just until combined (if you are using a food processor pulse until just combined...you want the pieces of pimento to show up).
  • 6. This recipe easily halves...you'll be using only one jar of pimentos, so drain half the juice off of it.
  • 7. Store in a covered container in the refrigerator.
  • 8. Great to make as sandwiches. Also good on Ritz crackers or as a filling in celery.

PIMENTO CHEESE SPREAD

Pimento Cheese Spread image

We had it in the fridge all the time from the deli in Virginia. This spread is so delicious, I think that this is a great spread to make for a large group gathering as a snack or appetizer. It has just that slight kick from the cayenne pepper that comes up at deli.

Provided by CHEF GRPA

Categories     Spreads

Time 20m

Yield 8-12 serving(s)

Number Of Ingredients 11

1/2 lb 'mild yellow cheddar cheese or 1/2 lb longhorn' cheese
1/2 lb aged sharp white cheddar cheese, preferably Vermont 'or New York'
one 7-ounce can pimiento, with their juice
1 cup chopped scallion
1/2 cup mayonnaise, 'preferably homemade'
2 teaspoons fresh lemon juice
1 teaspoon minced garlic
1 tablespoon Worcestershire sauce (to taste)
6 dashes Tabasco sauce (to taste)
1/2 teaspoon fresh ground black pepper
crackers or raw vegetables, for serving

Steps:

  • 1. Use a meat grinder or the coarse side of a box grater to grate the cheese; for a grinder, use the cutter with large holes. Put the ground or grated cheese in a mixing bowl and add half the juice from the canned pimentos. Dice the pimentos and add them. Add the chopped scallions.
  • 2. Combine the mayonnaise, lemon juice, and garlic. Add this to the cheese mixture. Add the Worcestershire, Tabasco, and black pepper and blend well; taste and adjust the seasoning.
  • 3. Serve at room temperature as a spread for crisp crackers and raw vegetables or use as a sandwich spread. (Pimento cheese can be tightly sealed and kept for several days in the refrigerator.).
  • Notes: I learned to make pimento cheese from a southern friend's mom. She doesn't use Worcestershire or garlic but I think they sound like great additions. I think I'll add this to next weekend's football food! I made it a day ahead of time and I think it tastes even better with a little time to rest before serving.

PIMENTO-CHEESE SPREAD

PIMENTO-CHEESE SPREAD image

Categories     Sandwich     Cheese     No-Cook     Lunch

Number Of Ingredients 8

2 - 8oz blocks extra sharp cheddar cheese, shredded
1 - 8oz block mild cheddar cheese, shredded
1 - 8oz package cream cheese, softened
1 - 12oz jar roasted red bell peppers, drained
1/2 cup pickled jalapeno slices, drained
1/4 cup mayonnaise
2 Tbsp Worcestershire sauce
2 - 7oz diced pimento, drained

Steps:

  • 1. Mix first 3 ingredients (in batches) in food processor. 2. Add in next 4 ingredients, pulse a few times until blended. 3. Finally, add pimentos and blend.

Tips:

  • To ensure a smooth and creamy spread, use a high-quality, sharp cheddar cheese. Grating the cheese yourself will also help achieve a better texture.
  • For a tangy and flavorful spread, use a good quality mayonnaise. A homemade mayonnaise will provide the best flavor.
  • Pimentos are the key ingredient that gives pimento cheese its signature flavor and color. Choose pimentos that are packed in water, not vinegar, for the best results.
  • Adding finely diced onion and celery adds a nice crunch and extra flavor to the spread.
  • For a smoky flavor, use smoked paprika. You can also add a pinch of cayenne pepper for a bit of heat.
  • Pimento cheese can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great make-ahead appetizer or snack.
  • Serve pimento cheese with crackers, bread, or vegetables. It can also be used as a sandwich spread or dip.

Conclusion:

Pimento cheese is a classic Southern spread that is easy to make and always a crowd-pleaser. With its creamy texture, tangy flavor, and smoky undertones, it's the perfect addition to any party or gathering. Whether you serve it as an appetizer, snack, or sandwich spread, pimento cheese is sure to be a hit.
