DEVILISHLY HOT PIMENTO CHEESE DIP
Steps:
- First, prepare the bread boule by slicing off the top 2 inches and hollowing out the center, leaving the walls of the boule about an inch thick. Cut the top and insides of the bread into bite-sized cubes and set aside.
- In a large saucepan, melt the butter over medium heat. Add the onions and cook until soft and translucent, about 5 minutes. Add the garlic and cook for 1 minute.
- Whisk in the mustard, paprika, cayenne and salt; cook for an additional 2 minutes. Sprinkle the flour over the onion/garlic mixture and stir to combine; cook about 2 minutes more. Gradually whisk in the milk and gently simmer for 2 minutes. Add the cream cheese and stir until it melts. Then add the Cheddar cheese. Once all the cheeses are melted, stir in the roasted peppers and hot green chiles. Season with black pepper to taste and additional salt, if necessary.
- Preheat the broiler on high.
- Scoop the pimento cheese mixture into the hollowed-out bread boule and place on a baking sheet. Broil until the top begins to bubble and lightly brown, a couple of minutes. Place the filled boule on a platter and serve immediately with the bread cubes.

Steps:
- To make the dip, heat the olive oil over medium-low heat in a 4-quart soup pot. Add the onions and shallots, and sauté until softened and clear, about 8 minutes. Add the salt, tomatoes, tomato juice, tomato paste, broth, bay leaf, basil, and thyme. Bring to a boil, lower to a simmer, and cook for 30 minutes.
- Mix the rice flour with the soymilk and the soy creamer. Whisk into the tomato mixture and simmer 5 minutes more. Remove the bay leaf.
- Puree the dip in 2 batches in a blender until smooth and creamy. At this point, taste the soup. If you think it needs to be sweeter, add the sugar, then season to taste with freshly ground pepper.
- To make the Pimento Cheese Bites, mix the cheese, mayonnaise, green onion, pimento, olives, salt, pepper, and red pepper sauce in a small bowl. Divide equally among 3 slices of the bread and top with the remaining bread slices. Heat a 10- or 12-inch non-stick sauté pan over medium heat. Spray with the cooking spray. If you're not watching your fat grams, add a tablespoon of the nonhydrogenated soy spread to the pan. Cook the sandwiches on each side until browned and cheese has melted. Add more spray or soy spread as you go along. Cut into quarters and serve with the dip.

Tips:
- Use high-quality cheddar cheese for the best flavor. A sharp or extra-sharp cheddar will give the dip a more intense flavor.
- Shred your own cheese instead of using pre-shredded cheese. Pre-shredded cheese contains additives that can prevent the cheese from melting smoothly.
- Use a food processor to finely chop the onion and celery. This will help the vegetables distribute evenly throughout the dip.
- Add the mayonnaise and sour cream a little at a time, until the dip reaches the desired consistency. You may not need to use all of the mayonnaise and sour cream called for in the recipe.
- Season the dip to taste with salt, pepper, and cayenne pepper. You can also add a pinch of garlic powder or onion powder for extra flavor.
- Serve the dip immediately, or chill it for at least 30 minutes before serving. Chilled pimento cheese dip is easier to spread and has a more developed flavor.
