Sweet Potato, Pesto & Pine Nut Slice image

This is a great vegetarian slice. Made with sweet potato (aka kumera). A regular onion is called for in this recipe- any onion will do. It travels well for picnics and is firm enough to be eaten with your hands. Its great warm or cold. Check that the pesto and yogurt used are gluten free if you require a gluten free diet

Time 10m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup artichoke heart, cooked (canned would be fine, and roughly chopped)
1/8 cup raw pine nuts
1/4 cup extra virgin olive oil
1 small garlic clove, peeled and minced
1/3 cup parmesan cheese, finely grated
coarse salt, a pinch (just a little since the parmesan is salty, you can always add more salt when finished)
fresh ground black pepper, a few grinds
1 -2 teaspoon fresh tarragon leaves, thinly sliced (use as much as you would like, to taste...I like 1 t.)

Steps:

  • Pulse the first 7 ingredients together in a food processor. Stir in the tarragon and season to taste with more salt and pepper, if needed.

  • Use fresh basil for the pesto sauce. Fresh basil has a more intense flavor than dried basil, and it will make your pesto sauce taste more delicious.
  • Toast the pine nuts before adding them to the pesto sauce. Toasting the pine nuts will bring out their flavor and make them more fragrant.
  • Use a food processor to make the pesto sauce. A food processor will make quick and easy work of blending the ingredients together.
  • Season the pesto sauce to taste with salt and pepper. You may also want to add a little bit of lemon juice or red pepper flakes to taste.
  • Spread the pesto sauce on the Pillsbury pizza crusts and top with your favorite toppings. You can use any toppings you like, such as cheese, vegetables, or meat.
