Steps:
- 1. PREHEAT oven to 350; grease and flour pans.
- 2. Mix all cake ingredients except pineapple juice on medium for about 3 minutes. This will cause the oranges to break up.
- 3. Pour into 2 - 9" round cake pans. Bake about 25 minutes or until the knife inserted comes out clean. Cool for 10 minutes.
- 4. While the cake is still warm, poke holes all over and drizzle with reserved pineapple juice.
- 5. Mix frosting ingredients well, making sure they are well combined and the pudding mix has dissolved.
- 6. Frost cake after it has completely cooled.
Tips:
- Make sure all of your ingredients are fresh, at room temperature, and measured accurately. This will ensure that your cake turns out perfectly.
- Use a buttermilk substitute if you don't have buttermilk on hand. You can add 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and let it sit for 5 minutes before using.
- Don't overmix the batter. Overmixing can result in a tough, dense cake.
- Bake the cake until a toothpick comes out clean when inserted into the center. If the toothpick comes out with batter on it, the cake needs to bake longer.
- Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
Conclusion:
Pig Lickin' Good Cake is a delicious, old-fashioned cake that is sure to please everyone. It is perfect for any occasion, from birthdays to potlucks. With its moist, flavorful crumb and rich, creamy frosting, this cake is sure to be a hit. So next time you are looking for a delicious cake to make, try Pig Lickin' Good Cake.
