This is a kid-friendly twist on the classic Italian combination of broccoli rabe and sausage. We discovered that cooking mini pierogies pot-sticker style in a hot skillet saved time (no waiting for water to boil) and left them both crispy and tender.

3 tablespoons olive oil
One 12.84-ounce box frozen mini potato-cheese pierogies
1/2 pound sweet Italian sausage (about 3 links)
2 cloves garlic, smashed and roughly chopped
Pinch red pepper flakes
1 pound frozen broccoli spears, thawed (split any spears that are very large)
1 cup low-sodium chicken broth
2 tablespoons grated Parmesan, plus more for serving

Steps:

  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Arrange the pierogies snugly flat-side down in the skillet (there may be some overlapping). Cook until the bottoms just begin to brown, about 3 minutes. Pour in 1/2 cup of water and simmer until the pierogi dough is tender and the water has completely evaporated, 4 to 5 minutes. Lower the heat to medium and continue cooking until the bottoms are golden brown, 2 to 3 minutes more; watch carefully as they can go from golden to burnt quickly. Remove from the heat.
  • While the pierogies cook, heat the remaining 1 tablespoon oil in a large skillet over medium heat. When the oil is shimmering, squeeze the sausage out of the casings into the skillet. Cook the sausage, stirring frequently and breaking it up into bite-size pieces, until browned, 5 to 6 minutes. Add the garlic and pepper flakes and stir until the garlic begins to brown, about 30 seconds. Stir in the broccoli. Stir in the broth, scraping the bottom of the pan to release any browned bits. Sprinkle with the Parmesan. Reduce the heat and simmer, uncovered, until the liquid is reduced by half and the broccoli is tender, 4 to 5 minutes. Remove from the heat.
  • Transfer the pierogies to a large, shallow serving dish and top with the sausage and broccoli mixture. Toss everything to combine and sprinkle with extra Parmesan.

9 uncooked lasagna noodles (normal NOT no boiled noodles)
8 medium baking potatoes peeled and cut into 1 inch chunks
1/4 cup milk
1/4 cup of butter
2 cup shredded old Cheddar cheese
1 teaspoon salt
1 teaspoon pepper
3 onions chopped
1 tablespoon butter
2 cups low fat ricotta cheese
1/2 teaspoon onion salt
1 pound bacon

Steps:

  • Cook the lasagna noodles according to the package instructions. Drain, rinse under cold water and set aside.
  • Grease the inside of a large crockpot.
  • Peel and dice the potatoes. Place in a large pot of water, bring to a boil and then cook until they fall apart when pierced with a fork.
  • Drain the potatoes and place in a large bowl.
  • Mash in the butter, salt, pepper and milk, and continue mashing the potatoes until smooth. Mix in the shredded Cheddar cheese
  • Stir 1/2 tsp onion salt into the ricotta cheese and set aside.
  • Place the bacon on a large foil lined cookie sheet and bake in a 350 degree oven for 20 minutes, until cooked but still soft (or cook in a pan on the stovetop).
  • Slice the three onions and fry in a pan with the tablespoon of butter until soft.
  • Cut the bacon with kitchen shears or cut it into smaller pieces with a knife.
  • Place 3 lasagna noodles onto the bottom of the crockpot.
  • Spread one cup of ricotta cheese on top of the noodles.
  • Spread 1/3 of the potato cheese mixture on top of the ricotta.
  • Spread one third of the bacon and one third of the onions on top of the potatoes.
  • Place another three noodles on top and repeat layer.
  • For the last layer, place the final three noodles on top, then potatoes and then bacon and onions, no ricotta cheese.
  • Cook in the crockpot on low for 2 hours.

1 shallot, thinly sliced
1 cup chopped green bell pepper
1 tablespoon olive oil
1/2 tablespoon red wine vinegar
1/2-1 teaspoon dried Italian seasoning
black pepper
1 lb potato-filled pierogi, fresh or frozen (if frozen, thaw before adding them to sauce)

Steps:

  • In a 5-6 quart slow cooker, combine the crushed tomatoes, shallots, peppers, oil, vinegar, Italian seasoning and black pepper.
  • Cover, and cook on LOW for 5-9 hours, OR on HIGH for 4-5 hours.

I was assigned a hot side dish for a potluck work luncheon, served aside of hot dogs and other party appy's, and decided to try this out in the crockpot and it worked. It went over well; many people went back for seconds and came looking for the leftovers the next day.....it was the only dish that was gone! Very simple indeed, but it's one of those dishes that you hardly lift a finger yet it goes a long way. Would go great aside of hamburger BBQ, sausage sandwiches, bratwurst, hamburgers, etc or make as a main dish. Perfect if you don't have an oven or have limited oven space for your party cooking. I have figured on 16 servings/3 pierogies per person and prep time includes sautee of onion and butter.

48 pierogies (I buy Mrs. T's, 48 pierogies will fill up a 5 qt crockpot)
16 tablespoons unsalted butter (1 cup)
1 large white onion, chopped
