CAKE
1 pkg white cake mix (15.25 oz)
1 tsp ground cinnamon
1 c sour cream
3 eggs
1/4 c water
*1 can(s) apple pie filling (21 oz)
GLAZE
1 c confectioners' sugar
1 - 1 1/2 Tbsp milk

Steps:

  • 1. Heat oven to 350º F.
  • 2. Beat the first 5 ingredients with a mixer until well blended.
  • 3. Pour into a greased and floured (or spray with Pam) 13×9-inch pan. Top with spoonfuls of pie filling. The cake will bake up over the filling.
  • 4. Bake 35 min or until a toothpick inserted in the center comes out clean.
  • 5. Cool 10 min.
  • 6. For the glaze, mix powdered sugar and milk. If the glaze is too thick to drizzle, add milk, by teaspoonfuls, until desired consistency.
  • 7. Drizzle over cake. Cool completely before slicing.
  • 8. *Substitute: Change the flavor of the coffee cake by preparing with your favorite pie filling, such as blueberry, apple or strawberry.

2 cups white flour
1 cup white sugar
1/2 cup butter, melted
2 teaspoons baking powder
1 egg
milk
1 (21 ounce) can pie filling
1 cup flour
1 cup sugar
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Combine 2 cups flour, 1 cup sugar, 1/2 cup butter, 2 teaspoons baking powder.
  • Place egg into measuring cup and add enough milk to measure 1 cup.
  • Add to other ingredients and mix until combined.
  • Pour into 9x13-inch pan.
  • Spread pie filling over top of batter.
  • Combine remaining 1 cup flour, 1 cup sugar, and 1/2 cup melted butter until crumbly.
  • Sprinkle over coffee cake.

1/2 c butter ( 1 stick )
2 c all purpose flour
1 c sugar
2 tsp baking powder
1/2 tsp salt
2 eggs, beaten
1/2 c milk
1 21oz. can pie filling ( i used strawberry)

Steps:

  • 1. Mix butter, flour, sugar, baking powder and salt in your mixer until you have a blended fine crumb texture to your mix.
  • 2. Reserve a 1/2 cup of crumb mixture aside for topping. Mix eggs and milk in a bowl and add to first mixture and stir just until moistened.
  • 3. Spread into a 9x13 buttered pan. Top with pie filling of your choice. Sprinkle with reserved crumbs. Bake at 400 for 35 minutes.

1/2 cup butter, room temperature (or use Crisco shortening)
1 cup sugar
2 large eggs
1/2 cup warm milk
1 tablespoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2-1 teaspoon cinnamon
1 (19 ounce) can blueberry pie filling
1/3 cup flour
1 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 cup sugar
4 tablespoons butter

Steps:

  • Set oven to 350 degrees.
  • Grease a 10-inch sprinform pan (or use an 11x7 or a 13x9-inch baking dish, the pan will be full for the 11x7-inch pan).
  • In a large bowl cream butter with sugar until fluffy.
  • Add in eggs and vanilla; beat until well combined.
  • In a small bowl mix together flour, baking powder, salt and cinnamon; add to the creamed mixture alternatley with warm milk.
  • Spread 2/3 of batter into the pan, then dollup tablespoonfuls of the pie filling all over top of the batter.
  • Dollup the remaining batter on top of the pie filling (it will look very uneven, that's fine!).
  • In a small bowl mix together the topping ingredients with your fingers, then sprinkle on top of cake.

  • *Note* adjust baking times for the 13x9 or the 11x7-inch baking dish, also for the 11x7-inch place a baking sheet underneath to catch any spills.

1 cup Butter, softened plus 2 TBS divided
3 Eggs

1 can Fruit Pie Filling (21 oz)
1/4 teaspoon Nutmeg
1/4 cup Almonds (chopped or ground)

Steps:

  • Preheat oven to 350 degrees. Coat a 9 x 13 inch baking pain with cooking spray, set aside.
  • In a large bowl with an electric mixer on medium speed, beat 1 1/2 cups sugar and 1 cup butter until creamy. Beat in eggs one at a time, mixing well after each addition. Add 3 cups flour, the baking powder and vanilla, beat well.
  • Spread half the batter into prepared baking pan. Spoon pie filling evenly over cake batter, leaving a 1/2 inch border around edge. Drop remaining batter by Tablespoonfuls over pie filling. Using a wet knife, carefully spread batter over pie filling, covering filling completely
  • For topping (if desired), combine remaining sugar, flour and butter, nuts and nutmeg, until well mixed and crumbly. Sprinkle evenly over top of cake. DO NOT USE MARGARINE.
