ZUCCHINI SALAD WITH PECORINO, BASIL AND ALMONDS

Zucchini Salad With Pecorino, Basil and Almonds image

Many recipes call for shaving raw zucchini into long strands, which looks whimsical but often leads to soggy squash. Cutting zucchini into thicker batons helps the vegetable retain some bite. Douse the strips with a bright garlic-caper vinaigrette, tender herbs and tangy pecorino, and just before serving, toss in some chopped almonds for crunch. This zucchini salad makes a great starter or a side, but it can also be the foundation of a meal: Add it to cooked penne or pearl couscous for a quick pasta salad, or scatter it over a slice of grilled bread that's been slathered with mascarpone or ricotta.

CLASSIC BEAN SALAD

Classic Bean Salad image

You can use any kind or combination of canned beans to make this classic picnic salad, but a mix of white beans, chickpeas and red kidney beans makes it especially colorful. Although this is delicious when freshly made, it gets even better as it sits. If you have time, make it at least an hour or two before serving; it can rest at room temperature for up to 4 hours - but after that, slip it into the fridge. If you want to make this the day before, add the celery and parsley just before serving, so they stay crisp and green.

Tips for Making the Perfect Picnic Zucchini Bean Salad:

- **Choose the right zucchini:** Select medium-sized zucchini, no more than 6 inches long, for the best flavor and texture. - **Cook the zucchini properly:** Zucchini should be cooked until tender but still firm. Overcooked zucchini will be mushy. - **Use a variety of beans:** This recipe uses black beans and chickpeas, but other beans such as kidney beans, pinto beans, or white beans can also be used. - **Make the dressing ahead of time:** The dressing can be made up to 2 days in advance. This will allow the flavors to meld and develop. - **Chill the salad before serving:** For the best flavor, chill the salad for at least 30 minutes before serving. This will allow the flavors to meld and develop. - **Serve with a side of crusty bread or crackers:** This salad is perfect for a picnic lunch or dinner. Serve it with a side of crusty bread or crackers for a complete meal.
